A method is disclosed for increasing the specific activity of myo-inositol oxygenase. The method includes incubating a mixture including myo-inositol oxygenase and a non-sulfur containing reductant under conditions effective to increase the specific activity of the myo-inositol oxygenase. Also disclosed are methods for producing D-glucuronic acid and glucurono-&#x3b3;-lactone comprising incubating a mixture including myo-inositol, myo-inositol oxygenase, and oxygen under conditions effective to form 5 grams D-glucuronic acid per liter of the mixture to 400 grams D-glucuronic acid per liter of the mixture. Glucurono-&#x3b3;-lactone can be produced from the D-glucuronic acid product. Also disclosed are organisms and nucleic acids suitable for use in such methods.

The present invention discloses a process for producing sodium 2-keto-L-gulonate from sorbitol and recovering 2-keto-L-gulonic acid in high recovery yields, by controlled cation exchange treatment of the micro-organism free fermentation broth and/or adjusting PII of said purified fermentation broth, followed by direct crystallisation of 2-keto-L-gulonic acid monohydrate.

The present invention discloses a process for producing erythritol by fermentation using a polysaccharide negative erythritol producing strain and recovering erythritol crystals by direct crystallization from the unrefined micro-organism-free fermentation broth. Direct crystallization of erythritol is performed at dry substance higher than 80% w/w. Recovery of erythritol crystals is at least 85% and purity of erythritol crystals is at least 99% w/w.
