A grease duct assembly is employed in a commercial kitchen. The grease duct assembly includes multiple sections that are connected together and sealed. Each section includes a double wall construction that forms a central conduit and an annular space that extends between an inner wall and an outer wall. Shredded insulation is directed into the annular space and compressed therein.

Disclosed herein is a system and process for monitoring and controlling fire suppression systems in commercial kitchens. Repeatedly various components of the fire suppression systems are tested for faults. When a fault is detected in a particular component, the fault is communicated through a communications module associated with the commercial kitchen via the internet to one or more remote servers. Upon receiving information indicating a particular fault, the one or more remote servers acts to alert interested parties of the default.

System and method for monitoring and controlling fire suppression systems in commercial kitchens

A heated air makeup unit comprising a heating chamber with a modulated furnace one or more non-modulated furnaces air temperature control and efficient furnace operation over a wide heating rate range. The utilization of indirect fired furnaces in the heated air makeup unit is disclosed. A control system is included to provide control of heated air temperature to within +/&#x2212;1 F.&#xb0; using continuous control of the heating rate of the modulated furnace and stepwise activation and de-activation of the non-modulated furnaces in response to heating demand. A programmed combustion air flow controller programmed to provide optimal airflow for any gas flow in a flow range of a modulating gas valve is provided to assure combustion efficiencies of at least 83%.

A kitchen exhaust hood assembly having a fire suppression system with built-in redundancy and monitoring capabilities is presented. The fire suppression system includes one or more fire suppression devices associated with the kitchen hood for extinguishing a fire within the vicinity of the exhaust hood. The fire suppression devices can be triggered by a series of manual actuators or fire sensors. A switching circuit including a plurality of switches operatively connected to the manual actuators or fire sensors triggers the fire suppression devices by enabling either a first or second actuating circuit.

The switching circuit and first and second actuating circuits are configured such that a break in the electrical connection between the switches and actuating circuits does not cause a failure in the operation of the fire suppression system. A supervision module is included in the assembly for monitoring the elements of the fire suppression system. The supervision module includes a plurality of monitoring circuits for monitoring the integrity of the electrical connections and the correct physical placement of various fire suppression system devices. The supervision module also includes a means of alerting appropriate personnel in the event that a fault is detected.

A system for directing two separate streams of air to a commercial or industrial kitchen environment. The system includes a dual airflow plenum that is normally disposed adjacent a kitchen exhaust hood. Typically one stream of air is a tempered, that is heated or cooled, and is directed through the dual airflow plenum to where it is exhausted at an area or point adjacent the exhaust hood. A second untempered, that is ambient air, air stream is directed through the same dual air flow plenum and is exhausted into an area adjacent the exhaust hood. Preferably the plenum is positioned with respect to the exhaust hood such that the outlet for the untempered air is disposed generally between the exhaust hood and the outlet for the tempered air. Moreover, the relative velocity of the two air streams is maintained or controlled such that the velocity of the tempered air stream is equal to or greater than the velocity of the untempered air stream.

A heated make-up air system comprising a duct structure having a direct gas fired burner mounted therein. Adjacent the burner there is provided an opening for permitting air to flow there through. Mounted adjacent the opening one or more pivotally mounted panels or profile plates. The moveable panels or profile plates are spring-biased to assume a normally closed position. However, the moveable panels are moveable from the closed position to an open position in order to control air flow through the duct structure and past the burner.
