An oxygen scavenging packet containing an iron-based oxygen scavenger and an electrolyte is set forth in which the rate of uptake of oxygen is increased by virtue of the introduction into the packet of an oxygen uptake accelerator containing water. Methods of increasing the rate of oxygen absorption by use of the iron-based oxygen scavenging packet are also set forth.

Methods of using an oxygen scavenger

Absorbing oxygen from a closed space at a rapid rate, particularly in food packaging, is made possible by introducing an alcohol-water mixture as an activator for iron-based absorber systems, preferably including an acid to control pH. Preferred alcohols are aliphatic alcohols, particularly, monohydric alkanols, such as methanol, ethanol, n-propanol, isopropanol, sec-butanol and t-butanol. Such absorber-activator combinations are capable of rapidly reducing the oxygen in a closed package. A preferred acid is orthophosphoric acid used in an amount sufficient to establish a pH of about 0.6 to 4. A preferred iron-based absorber system employs sponge iron, optionally including a dibasic acid cooperating with the orthophosphoric acid to control pH in the system. In one preferred embodiment, the iron-based absorber is pre-activated by contacting with the activator in the substantial absence of oxygen for a predetermined period of time.

Oxygen scavenger accelerator

A method and apparatus for inserting an oxygen scavenger into a modified atmosphere package for extending the shelf life of food, especially raw meats. A scavenger feeder feeds a chain of interconnected oxygen scavengers. A separator separates the oxygen scavenger located at an exposed end of the chain of interconnected oxygen scavengers from the chain of interconnected oxygen scavengers. An adhesive applicator applies adhesive to the oxygen scavenger which has been separated from the chain of interconnected oxygen scavengers. A conveyor conveys the separated oxygen scavenger to a position which is adjacent to a film layer which is used to form an outer package of the modified atmosphere package so that the oxygen scavenger is attached to a surface of the film layer by the adhesive. The film layer is subsequently formed into the outer package so that the oxygen scavenger that is attached to the film layer is contained within the outer package. Optionally, an injector injects the oxygen scavenger at the exposed end of the chain of interconnected oxygen scavengers with an oxygen uptake accelerator to activate the oxygen scavenger prior to separating the oxygen scavenger from the chain of interconnected oxygen scavengers. The modified atmosphere package comprises the outer package, the oxygen scavenger, and any food-filled inner package which is inserted into the outer package.

Apparatus for inserting an oxygen scavenger into a modified atmosphere package

An iron-based oxygen scavenging packet is set forth in which the rate of uptake of oxygen is increased by virtue of the presence of an oxygen uptake accelerator such as water which is introduced into the packet. Methods of increasing the rate of oxygen absorption by the iron-based oxygen scavenging packet are also set forth.

A unique method and apparatus for inserting an oxygen scavenger into a modified atmosphere package for extending the shelf life of food, especially raw meats. Method and apparatus for inserting an oxygen scavenger into a modified atmosphere package

A packaging system and method utilizes a modified atmosphere package including a first package and a second package. The first package includes a non-barrier portion substantially permeable to oxygen, while the second package is substantially impermeable to oxygen. After a food product such as raw meat is placed within the first package, the first package is sealed and then inserted into the second package without sealing the second package so as to create a pocket between the first and second packages. The system and method first employ an oxygen reduction technique such as evacuation, gas flushing, and/or scavenging to quickly reduce the oxygen level in the pocket to a first non-zero level, and then employ an activated oxygen scavenger to further reduce the oxygen level to zero percent after the package is sealed. The oxygen scavenger is activated with an oxygen uptake accelerator to increase the rate at which the oxygen is absorbed. The oxygen scavenger is positioned external to the first package to aggressively absorb any residual oxygen within the pocket and the first package and absorb any oxygen that might seep into the modified atmosphere package.

System and method of making a modified atmosphere package comprising an activated oxygen scavenger for packaging meat

A modified atmosphere packaging method creates a modified atmosphere in a package including an inner package and an outer package. The inner package is composed at least partially of a polymeric material substantially permeable to oxygen, while the outer package is composed of a polymeric material substantially impermeable to oxygen. After a food product such as raw meat is placed within the inner package, the inner package is flushed with a desired mixture of gases to substantially remove oxygen from the inner package. The flushed inner package is then sealed and inserted into the outer package without sealing the outer package. Next, the outer package is flushed with the desired mixture of gases to substantially remove oxygen from the outer package. After flushing the outer package, the outer package is sealed. An oxygen scavenger is provided in the package to substantially absorb any residual oxygen within the package. The oxygen scavenger is activated with an oxygen uptake accelerator to increase the rate at which the residual oxygen is absorbed.

Modified atmosphere package

A modified atmosphere package includes first and second compartments separated by a partition member that is substantially permeable to oxygen. The first compartment contains an oxygen scavenger activated with an oxygen scavenger accelerator. The second compartment contains a retail cut of raw meat. Various techniques are employed to rapidly reduce the oxygen level in the second compartment below pigment sensitive levels so that the growth of metmyoglobin is inhibited. Some of these techniques increase the flow of oxygen from the second compartment to the first compartment through the partition member, while other techniques directly absorb oxygen within the second compartment by locating a second oxygen scavenger within the second compartment.

Modified atmosphere package with accelerated reduction of oxygen level

A modified atmosphere package includes first and second compartments separated by a partition member that is substantially permeable to oxygen. The first compartment contains an oxygen scavenger activated with an oxygen scavenger accelerator. The second compartment contains a retail cut of raw meat. Various techniques are employed to rapidly reduce the oxygen level in the second compartment below pigment sensitive levels so that the growth of metmyoglobin is inhibited. Some of these techniques increase the flow of oxygen from the second compartment to the first compartment through the partition member to a level inhibiting the formation of metmyoglobin in the raw meat.
