Tempered xylitol coatings and methods for applying the same are disclosed. A gum coating device coats a gum core with a first syrup to form a first coating, wherein the first syrup comprises xylitol, a first coating impurity, and a binder. The first syrup does not include a coloring agent and the first coating impurity is selected to slow the crystallization of xylitol. The gum coating device coats an outer surface of the first coating with a second syrup to form a second coating. The second syrup comprises xylitol, a second coating impurity, a binder, and a coloring agent. The second coating impurity is selected to slow the crystallization of xylitol. The gum coating device tempers the gum core after at least a first layer of the first coating is applied and before a last layer of the second coating is applied.

Tempered xylitol coating for chewing gums

A dual composition hard coated chewing gum is provided which exhibits improved long-term shelf stability under storage conditions involving constant exposure to the moisture contained in the atmosphere. The dual composition hard coated chewing gum is ideally suited for pellet chewing gum having pellet shapes which cannot easily be protected from atmospheric moisture by packaging. The dual composition hard coated chewing gum has a gum center which includes a gum base, a bulk portion, and one or more flavoring agents. The dual composition hard coated chewing gum also has an outer coating which includes layers which contain from about 50 to about 100% xylitol; and layers which contain from about 50 to about 100% hydrogenated isomaltulose. A method of preparing the dual composition hard coated chewing gum is also provided.

Dual composition hard coated gum with improved shelf life

A coated chewing gum product with an emulsifier subcoat and method of producing the same are disclosed. Chewing gum centers are coated first by an emulsifier, preferably hydrated lecithin, and then by a hard coating, such as a sugar coating applied by conventional hard-panning techniques. Preferably a binder layer, such as gum arabic, is provided between the emulsifier subcoat and the hard-panned coating.
