A flavone synthase that synthesizes flavones from flavanones, vectors containing DNAs encoding said flavone synthases, and plants expressing same are disclosed. Methods of producing the protein which synthesizes flavones from flavanones, methods of altering the composition of flavonoids or the amount of flavonoids in a plant, methods of altering flower color and plant photosensitivity, and methods of controlling interactions between plants expressing the protein and microorganisms are also disclosed.

A [DNA encoding a] flavone synthase that synthesizes flavones from flavanones, vectors containing said DNAs encoding said flavone synthases, and plants expressing same are disclosed. Methods of producing the protein which synthesizes flavones from flavanones, methods of altering the composition of flavonoids or the amount of flavonoids in a plant, methods of altering flower color and plant photosensitivity, and methods of controlling interactions between plants expressing the protein and microorganisms are also disclosed.

2-Hydroxyisoflavanone dehydratase substantially having the amino acid sequence represented by SEQ ID NO: 1 is isolated from licorice. Further, a polynucleotide encoding 2-hydroxyisoflavanone dehydratase of the SEQ ID NO: 2 is obtained. Furthermore, the amino acid sequence of 2-hydroxyisoflavanone dehydratase is identified from soybean and a polynucleotide encoding 2-hydroxyisoflavanone dehydratase is obtained.

2-Hydroxyisoflavanone synthase substantially having the amino acid sequence represented by SEQ ID NO:2 and a polynucleotide substantially having the nucleotide sequence of SEQ ID NO:1. Thus, 2-hydroxyisoflavanone synthase can be expressed in a host cell. By transferring the polynucleotide encoding 2-hydroxyisoflavanone synthase into a plant cell, a plant having an altered isoflavone productivity can be obtained.
