There are provided a method of identifying thespecies alone, such assubsp.alone, and measuring the viable cell count thereof, amongst the bacterial cells to be tested which include a microorganism belonging to the genusby using a culture medium that contains L-arabinose as a sole sugar source; and also a culture medium which is useful as a selective medium for the above measurement method and which is also easy to prepare.

The present invention relates to bacteria of a genushaving bacteriological properties of: (1) fermentability which curdles a 10% (W/W) reconstituted skim milk medium when cultivated at a temperature of 25&#xb0; C. to 37&#xb0; C. for 16 hours; (2)growth-promoting properties which lead to a viable count ofof 5&#xd7;10CFU/g or more, when co-cultivated within the 10% (W/W) reconstituted skim milk medium, until the pH thereof is 4.4 to 4.6; and (3)survivability-improving properties during storage, which lead to a survival rate ofof 30% or more, after co-cultivation within the 10% (W/W) reconstituted skim milk medium until the pH thereof is 4.4 to 4.6, rapid cooling, and two weeks storage at 10&#xb0; C.

A culture containing a viable mass of Bifodobacteria and lactic acid bacteria is obtained by incubating separately or together microorganisms of the genus Bifidobacterium and Lactobacillus, and the species Streptococcus thermophilus in a medium containing milk as the main ingredient. The Streptococcus thermophilus is a strain having high oxygen uptake. When incubated separately, the microorganisms are mixed together after incubating. In the presence of the high oxygen uptake Streptococcus thermophilus, a high survival fraction of the Bifidobacteria is obtained when the culture is stored under aerobic conditions. The culture is useful in preparing food, medicine or feed.
