The invention provides a method of preparing &#x3b2;-erythritol fatty acid monoester, including: subjecting a fatty acid and erythritol to esterification reaction in the presence of an acid catalyst, a water carrier and an optional phase transfer catalyst, wherein the molar ratio of the fatty acid to erythritol is 1:2 to 1:3, and the temperature of the esterification reaction is 80-100&#xb0; C. In addition, the invention further provides a method of preparing 2,3-erythritol fatty acid diester, including: subjecting a fatty acid and erythritol to esterification reaction in the presence of an acid catalyst and a water carrier, wherein the molar ratio of the fatty acid to erythritol is 2:1 to 3:1, and the temperature of the esterification reaction is 120-160&#xb0; C.
