Twisted quick cooking pasta having, in transverse section, the shape of a helix having at least one blade attached to an axis, the axis being hollow, the wall thickness of the axis and of the blade or blades being between 0.3 and 1.1 mm, and the degree of twisting being such that it has a density of between 0.2 and 0.7 g/cm.sup.3, the volume being defined as the cylindrical space occupied by the pasta.
