The present invention relates to transglutaminases and transglutaminase preparations obtained from lower fungi belonging to the class Oomycetes and unprecedented high-level expression is achievable by growing these coenocytium forming organisms, especially the strainssp.,(or),and; and a recombinant transglutaminase has been cloned and expressed, the enzyme and enzyme preparations being useful for cross-linking proteins, e.g. in flour, baked products, meat products, fish products, cosmetics, cheese, milk products, gelled food products and leather finishing, or as a glutaminase, e.g. in bread and other baked glutein-containing food products.

Transglutaminase from oomycetes

The present invention relates to a method of generating a gene library from an environmental pool of organisms, which gene library is enriched in DNA encoding a polypeptide with an activity of interest. Also, the invention provides a method of selecting a DNA sequence of interest from an environmental pool of organisms. Further, the invention relates to a gene library prepared from an enriched environmental pool of organisms enriched in DNA encoding a polypeptide with an activity of interest.

Method for generating a gene library

Lipolytic enzymes with high activity at alkaline pH in the absence of Ca can be obtained from filamentous fungi of the genera Gliocladium, Verticillium and Trichophaea and that the lipolytic enzymes are effective for improving the effect of detergents. The lipolytic enzymes have a good washing performance, as expressed by the hydrolysis of oil on textile swatches. The amino acid sequences of the lipolytic enzymes are highly homologous.

The present invention provides an enzyme with acetyl esterase activity comprising the amino acid sequence IxFGDxYYT(SEQ ID NO: 1), in which x designates any amino acid residue. The enzyme exhibits activity towards acetylated xylan and acetylated mannan and may be used for modifying or degrading plant containing materials.
