An apparatus and method for automatically recovering flesh from beheaded and gutted fish, comprising a transport device for transporting the fish tail-first along a transport path in transport direction T, and a separating device () for separating the flesh from the bone structure, wherein the separating device has at least two rotatably driven and controllable circular knives arranged at a distance from each other on mutually opposing sides of the transport path in order to form a gap S. The two circular knives are designed to be pivoted about an axis I, II that differs from a horizontal orientation, wherein the axes I, II are oriented in such a way that, by pivoting the circular knives about the axes I and II, the point P of the smallest gap size between the circular knives can be positioned differently from the lowest knife point M of the two circular knives.

Apparatus and method for automatically obtaining flesh from beheaded and gutted fish

An apparatus for separating a surface layer from animal food products comprises a carrier roller, a cutting device opposite the carrier roller with a blade holder pressure body and a pressing device exerting a pressing force on the blade holder pressure body. An automatic traction gap for transporting the separated surface layer is formed between the driven carrier roller and the blade holder pressure body. A rear pressure body pivoting axis is set up on a side of the blade holder pressure body facing away from the carrier roller. The apparatus has a pressure body guiding device automatically shifting the blade holder pressure body out of the defined initial position, with which the rear pivoting axis is arranged and is automatically shiftable such that, in the case of the blade holder pressure body pivoting up through inlet of the surface layer against the pressing force, the traction gap becomes wider in an inlet area and narrower in an outlet area. The blade holder pressure body is held freely switchable against the pressing force so that that a floating application on the surface layer completely pulled into the traction gap occurs along the traction gap. A method for automatically separating the surface layer is executed in that during inlet of the surface layer into the traction gap the inlet area is simultaneously expanded and the outlet area is narrowed. The rear pivoting axis in an area behind the zenith of the carrier roller is shifted in an automatically guided manner towards it and the blade holder pressure body is held in a floating, switchable working position in the case of a traction gap completely filled with the surface layer.

Device and method for separating a surface layer from animal food products

A method and apparatus to separate a surface layer of a product in the food industry. The apparatus includes a transport device to transport the product from an input region to an output region and a pressure device to press the product against the transport device. A separating device is arranged in the output region to separate the surface layer from the product. The separating device defines a separating gap between the separating device and the transport device. A substantially cylindrical, rotatably controllable deflecting device is arranged in the output region. The deflecting device has a shape varying in the axial direction and/or a circumferential direction. The transport device is guided around the deflecting device to create a variable process gap to separate the surface layer of the product from the product.

Device and method for separating surface layers in products of the food industry

The invention concerns a conveying apparatus, essentially including an endless conveying element which is guided over several deflecting elements and comprises a conveying sector and a return sector, the conveying sector defining a conveying plane E, a drive for the conveying element and elements for centering the conveying element, which is distinguished by the fact that at least the deflecting elements arranged at opposite ends of the conveying sector are designed as elements for centering the conveying element transversely to the direction of transport T with an inwardly directed shape.

Conveying apparatus

A method for obtaining muscle flesh from beheaded fish by severing muscle flesh from dorsal and/or ventral spokes together with fins and fin holders as well as from ribs or lateral vertebral appendages and a vertebral column. The method uses an apparatus having severing means for severing the muscle flesh from the dorsal and/or ventral spokes which include a first tool and a second tool, each of which is provided with pairs of cutting means. The cutting means of the first tool and the associated bone guides can be controlled in height with respect to the position of their cutting edges and guide edges, respectively, relative to a conveying path. The cutting means of the second tool are constructed as knife blades arranged between the bone guides with the cutting edges pointing towards the conveying path. The knife blades are elastically displaceable away from the conveying path. The method includes the steps of providing the fish for severing of the muscle flesh from the spokes with incisions running along the row of fins and on both sides of the fin holders and essentially extending into the region of the tips of the spokes and severing of the muscle flesh from the spokes which is affected following on from the incisions adjacent to the fin holders.

Method for stripping the muscle meat from fish and device for carrying out this method

The invention concerns a method for deboning fish of the mackerel family such as the Thunnus genus, the scomboid type and the like, and an apparatus for performing this method. Fish of this family have belly spokes extending along the full length of the backbone into the area of the belly cavity, so that conventional cutting free of the back and belly spokes will lead to a separation of the ribs from the remaining bone structure. To allow an accurate filetting of mackerel fish with their specific bone structure in the ventral cavity region, the invention suggests a slice of fish meat including the ribs to be cut free automatically by providing a computer controlled tool including a knife with a cutting edge diverging with respect to the conveying path of the fish, and a supporting element, which in combination with the knife allows the ribs to be cut away progressively while respecting the anatomical characteristics of the fish.
