The invention provides a nitrile hydratase activation protein participating in activation of nitrile hydratase derived from JCM3095, and a gene sequence encoding the same. Further, the invention provides a recombinant plasmid containing the gene, a recombinant plasmid containing the gene and a nitrile hydratase gene, a transformant strain obtained through transformation with the recombinant plasmid, and a process for producing a corresponding amide compound from a nitrile compound using a culture solution and cells obtained by incubating the transformant strain and treated products of the cells.

A method for producing phytase using a Candida boidinii transformant, by which phytase is secreted to liquid medium without substantially increasing the number of the transformant cells is disclosed. In this method, cells of a Candida boidinii transformant which is transformed with a recombinant vector comprising a promoter inducible with methanol and a gene located downstream of said promoter and operably linked to said promoter, which gene encodes a polypeptide having phytase activity, are cultured in a liquid culture medium containing phosphoric acid or a phosphate compound in an amount effective of restricting proliferation of said cells of Candida boidinii transformant such that the amount of said cells of Candida boidinii transformant is not substantially increased, while adding methanol to the culture medium, so as to make said cells secrete said phytase.

Method for producing phytase

A novel phytase is disclosed. The phytase consists essentially of a single type of subunits, and can hydrolyze a phytate to myo-inositol. A gene encoding the phytase, which is originated from Schwanniomyces occidentalis is also disclosed.

This invention is a method of producing L-serine by causing glycine to react with formaldehyde by using the culture solution or the microbe cells of a microorganism belonging to the genus Escherichia, having the ability of producing serine hydroxymethyltransferase and not having the practical ability of producing L-serine from glycine alone or enzymatic matter obtained through the treatment of the above culture solution or microbe cells. In this invention, the yield of L-serine can be increased either by carrying out the reaction while maintaining aldehyde concentration at 20 mM or below or by using microbe cells of the aforementioned microorganism after they are caused to contact glycine.
