The present invention relates to high intensity sweetener glycosides which have been modified using a glycosyltransferase so as to reduce off-flavours. The invention also relates to uses of the modified high intensity sweetener glycosides and methods of production thereof.

The present invention relates to a prebiotic composition comprising a galacto oligosaccharide (GOS) produced from, wherein the GOS acts as a selective growth medium for a chosenprobiotic bacterial strain, and wherein the GOS is substantially the same as the form produced by reverse &#x3b2;-galactosidase reaction in the chosen probiotic bacterial strain.
