The composition disclosed herein comprises about 55 to about 90 weight percent of a monoglyceride component comprising a monoglyceride having an acyl chain of 12 to 22 carbons, about 5 to about 35 weight percent of an acetylated monoglyceride component comprising an acetylated monoglyceride having an acyl chain of 12 to 22 carbons, and about 2 to about 40 weight percent water. The present composition is a liquid crystalline phase composition at a temperature of about 20 to about 80&deg; C., preferably a cubic liquid crystalline gel.
