A floating lid is provided which enables the preparation of a beverage of uniform consistency which is retarded in its loss of volatile, oxidation and contamination. The floating lid is buoyant and has an aperture through which the beverage passes. The aperture is surrounded by upwardly-extending walls which form a chamber for the purpose of creating a hydrostatic head of beverage above the aperture.

A method of lessening the off-flavor notes of low-grade roasted coffee is disclosed. Low-grade green coffee is contacted with a fatty material, preferably a triglyceride, for a period of time between about 15 min. and 60 min. The low-grade green coffee is subsequently separated from the fatty material. Any residual fatty material may be removed by rinsing the low-grade green coffee with acetone. The coffee is then roasted, providing a low-grade roasted coffee having lessened off-flavor notes.

This invention relates to a clouding agent obtained by drying an aqueous dispersion comprised of, on a dry basis, a major amount of malto dextrin (in solution) and minor amounts of xanthan gum and titanium dioxide. The clouding agent thus obtained is added to a dry beverage mix in amounts effective to produce the desired opacity and remain suspended for a time sufficient to consume a beverage prepared from the dry mix.

Brewing problems associated with roasted and ground coffee and wheat compositions are eliminated by employing a roasting time for the wheat component of between 40 and 90 minutes. The roasted wheat is then combined with roasted coffee either before or after grinding.

Roasted and ground coffee is contacted with steam and the evolved vapors are condensed and partitioned in two separate and successive operations with liquid glyceride material such as a vegetable oil. By the use of appropriate partitioning parameters both the second glyceride and water phases have been found to have a smooth, buttery flavor useful for enhancing soluble coffee. The second glyceride phase may be combined with natural grinder gas, added to liquid coffee extract and then dried to produce an aromatized soluble coffee product.
