A process for separating the hollowed body of a poultry carcass into a lower half body including the thighs and part of the back, and a upper half body including the breast inclusive of the ribs and the remaining part of the back, including a first process step in which the hollowed body is cut from the roots of the thighs through the tail ends of the ilia while the hollowed body is transferred in a suspended state without cutting the keel, and a second process step in which the sinews and connective tissues are cut at the side of the hipbone and the thighs are ripped off with high yields. Apparatus for the first step includes a conveyer line a peritoneum cutting part a 90 degree reversing part and a poultry carcass severing part Apparatus for the second step includes a toothed conveyer with a lower belt which transfers the lower half body hooked at the hipbone, a parallel running conveyer provided under the toothed conveyer for ripping and carrying out the thigh of the lower half body, and a pair of parallel guide plates provided under the lower belt, the lower half body including the hipbone and thigh being transferred clasped between the parallel guide plates and the lower belt.

Method of separating meat of a poultry with bones and apparatus for use in such method

An automatic deboning method and apparatus are provided whereby, in a deboning process comprising the steps of: severing shoulder joints off from an upper half of a poultry carcass; stripping wings together with breast meat; then removing white meat, and thus deboning is completed, a high recovery rate is secured while coping with individuality of a work, such as a size and imbalance between the left and right sides, in an automatic manner, and the apparatus comprises: a main tact transport section 29 and an auxiliary tact transport section 30 wherein the main tact transport section 29 includes a main tact transport 20 and a group of 1.sup.st to 12.sup.th stations.

Automatic deboning method and apparatus for upper half of poultry carcass

A method and apparatus for separating bone and meat of the upper half of a poultry carcass with a variety of the sizes are provided, wherein first cutting is effected in the neighborhood of a shoulder joint to disconnect tissues under influence of a separation force applied between the upper half of a poultry carcass and the head of a humerus, second cutting is effected along the surface of the front side of a furcula, and then breast meat is efficiently separated by a conventional device with a higher recovery rate and an auto-loading system comprising a plurality of buffer conveyors is provided, wherein the upper halves of poultry carcasses are continuously loaded to as many apparatuses for the separating without downtime. In the first cutting of the method and an apparatus for the separating, an inserting position and depth of an obliquely moving cutter blade (116) is properly determined with accuracy by the help of a guide bar with reference pieces, which is selected according to the size of the upper half of a poultry carcass and put inside the shoulder joints for setting reference planes, vertical and horizontal.
