Methods are provided for treating freshly harvested olives to substantially retain the quality of oil contained therewithin for enabling production of high quality olive oil from said treated olives at a prolonged time after harvest and treated freshly harvested olives with retained oil qualities characterized in that the oil extracted therefrom after a prolonged storage time meets the standards of the IOC for Virgin Olive Oils.

Method for treating olives to be utilized for olive oil production

A new and distinctL. olive tree variety named 'MASEPO', particularly characterized by a small to medium-sized tree facilitating hand picking, suitable for intensive orchard growing with harvesting from the ground level with only minimal pruning required, good resistance toand round fruit, with attractive black color when ripe and desirable taste when processed at full black maturation.

A new and distinctL. olive tree variety named 'SEPOKA', particularly characterized as a small to medium-sized tree facilitating hand picking, suitable for intensive orchard growing with harvesting from the ground level with only minimal pruning required, good resistance toand elongated shaped fruit, with attractive, shiny appearance, light green-yellow colored skin covered with large greenish mottles which is suitable for both green and black pickling (particularly desirable for green processing).

Olive tree named 'SEPOKA'

A new and distinctolive tree variety named 'ASKAL', particularly characterized by a medium-sized tree with vigorous growth, high fruit yield, field resistance to Spilocaea oleagina, mature fruit with average commercial oil content of 23.5% on fresh weight basis under irrigation, a well-balanced fruity-grassy taste, good stability (7.8 h at 1100C), high oleic acid content of about 72% and good polyphenol content (233 mg/kg).
