A short chain peptide material is provided containing a peptide material derived from a protein material. At least a majority of the peptides in the peptide material have a peptide chain length of 7 peptides or less. The peptide material is at least 95% soluble in an aqueous solution having a pH at which the protein material from which the peptide material is derived is insoluble. A process for forming the short chain peptide material is also provided. A slurry is formed of a protein material at a pH at which the protein material is substantially insoluble. The protein material is contacted with an enzyme having substantial endopeptidase activity and substantial exopeptidase activity at a temperature and for a time sufficient to form the peptide material of the invention.

Short-chained peptide material

The present invention relates to an enzymatically modified dietary fiber material particularly a soy fiber material of improved sensory properties including smoothness and mouthfeel characteristics. The modified fiber is formed by forming an aqueous slurry of a soy dietary fiber material and modifying or hydrolyzing the material with a process modifying dietary soy fiber and the resulting enzyme mixture which comprises a mixture of a cellulase and a carbohydrase. The degree of hydrolysis is sufficient to improve the sensory properties of the soy fiber material without substantially reducing the dietary fiber content thereof.

Modified soy fiber material of improved sensory properties

A method of producing a mineral enriched protein composition for use in the production of liquid foodstuffs comprising: Forming a hydrated gel of an alkaline earth salt, such as a calcium salt and adding the hydrated gel to a slurry of a soy protein isolate to form a mineral enriched soy protein composition. The composition can then be dried and upon resuspension in a liquid foodstuff results in improved suspension of the mineral in the foodstuff.
