An antibacterial agent suppresses the growth of gram-positive contaminating bacteria. The antibacterial agent is selected from: a lactylate in accordance with the general formula (R—(O—CH(CH)—CO)O)M; a glycerol ester in accordance with the general formula CHOR—CHOR—CHOR; and, mixtures thereof. In the general formulae: R represents a C4-C18 acyl group, R, Rand Rare each independently selected from H or a C4-C18 acyl group, the acyl group having an alkyl or alkenyl chain which may be branched or unbranched, with the proviso that at least one of R, Ror Ris H and at least one of R, R, or Ris an acyl group; M represents a proton (H) or a counter-cation chosen from the group Li, Na, K, Ca, Mg, Zn, Fe(II), Cu, Mn, Ag, ammonium or substituted ammonium having one or more (C1-4)alkyl optionally substituted with one or more hydroxyl.

Fatty acid esters against infections in fermentations

An antibacterial composition includes a combination of fatty acid ester of fatty acid and hydroxy carboxylic acid with an antibacterial agent selected from polylysine, chitosan, protamine, their salts and mixtures hereof. The hydroxy carboxylic acid may be present as acid in its free form, in its salt form and/or in its ester form. The composition may be used as an antibacterial agent against gram-negative bacteria in various products, applications and methods.

Antibacterial agent based on fatty acid esters of hydroxy carboxylic acids

The present invention pertains to a method for the production of lactic acid or a salt thereof wherein starch is subjected to a process of simultaneous saccharification and fermentation, the method comprising saccharifying starch in a medium comprising at least a glucoamylase and simultaneously fermenting the starch using a microorganism, and optionally isolating lactic acid from the medium, characterized in that a moderately thermophilic lactic acid-producing microorganism is used. The invention further relates to a method of performing said process in the presence of a moderately thermophilic lactic acid producing microorganism, which has been adapted to have its maximum performance at the working pH.

Method for the production of lactic acid or a salt thereof by simultaneous saccharification and fermentation of starch

The present invention relates to an antibacterial composition based on a combination of fatty acid ester of fatty acid and hydroxy carboxylic acid with an antibacterial agent selected from polylysine, protamine, their salts and mixtures hereof. The hydroxy carboxylic acid may be present as acid in its free form, in its salt form and/or in its ester form. The present invention further is directed to the use of said composition as antibacterial agent against gram-negative bacteria in various products, applications and methods. Furthermore, the present invention is related to products comprising said antibacterial agent.

Antibacterial agent based on fatty acid esters of hydroxy carboxylic acid acids

Cost-effective processes for producing lactic acid and/or lactate from pentose-containing substrates, such as xylose-containing substrates, are provided. In particular, processes for producing lactic acid and/or lactate include fermentation of pentoses, such as xyloses, to enantiomerically pure lactic acid and/or lactate by moderately thermophilicspecies. This fermentation runs by a homofermentive pathway and produces predominantly Ccompounds, so that Ccompounds can be recovered as lactic acid and/or lactate.
