A microwave heating system configured to heat a plurality of articles and a process for using the same is provided. The heating system includes at least two laterally-spaced parallel convey lines and two or more groups of microwave launchers configured to heat articles transported along each convey line. The groups of microwave launchers can include pairs of oppositely disposed launchers that are spaced apart from one another along the axis of convey. When the system includes multiple convey lines, adjacent launcher groups are staggered relative to one another in the convey direction. Heating articles, such as foodstuffs or medical fluids or equipment in such a system, minimize undesirable interference between launchers of adjacent groups and provide a more uniform heating field.

The systems and methods of the present invention provide an economically feasible means of thermally processing items such as food products. In some embodiments, the thermal process is a pasteurization process. In other embodiments, the thermal process is a sterilization process. The thermal process utilizes a volumetric heating process to quickly and efficiently add heat energy to the item and then utilizes a surface heating process to obtain a relatively even, highly elevated, temperature throughout the item. In this way, the time required to perform various thermal processes, such as pasteurization and/or sterilization, is greatly reduced compared with traditional processes while still being more reliable and more predictable than other recently developed processes. Furthermore, the system and method is less complicated and more efficient than other systems and processes currently known. Furthermore still, the method includes spraying fluid onto a surface of the item to reduce edge heating.

System and method for sterilizing food products

A continuous feed volumetric heating and convection oven for heating articles includes an oven body, a conveyor for moving the articles therethrough, a volumetric heating source for delivering microwave or other volumetric heating energy to the oven body, and a ventilation system for delivering a flow of heated air to the oven body. The ventilation system includes a heater and at least one damper associated with an exhaust whereby air may be partially recirculated and partially exhausted from the oven body. Microwave chokes and microwave suppression tunnels are provided for limiting the escape of volumetric heating energy such as microwave energy into the surrounding area and into the ventilation system.
