A top grill assembly for use with a conventional grill apparatus includes a J-shaped support bracket for mounting over the back of a grill enclosure and a generally elongated U-shaped supporting handle having legs pivotally mounted on the support bracket. A top grill is pivotally supported from the supporting handle near its front and captivated thereto near its rear to permit a limited range of angular movement with respect to the supporting handle. A pressurized gas cylinder is positioned between the support bracket and a cross member joining the supporting handle legs for counterbalancing the weight of the top grill. The gas cylinder may be attached to a bracket in a plurality of positions for varying the pressure applied by the top grill when lowered into the cooking position. A thermostat housing is mounted to the cross member and a cord guide maintains the electrical cord in a safe orientation.

Hinged top grill arrangment

A metal protective cover for the temperature control knob on a deep fat fryer includes an outer annular ring and is formed to enclose the control knob. The control knob is surrounded by an annular backing plate that is secured by three screws. The annular ring has a diameter that is small enough to fit within the circle inscribing the shanks of the three screws and large enough to be held in place by the screw heads.

Protective cover for temperature control

A heating luminaire has a slightly resilient spun metal housing with a rolled bead of larger diameter formed near the circular opening thereof. A wire guard having four extensions arranged to seat within the bead is inserted through the circular opening, which is of smaller diameter than the bead, by bending one of the extensions and distorting the resilient housing. The guard is locked in place by bending the extension back toward its original position.

A griddle includes a thick metal plate having a cooking surface and is heated from below by four infrared gas burner units. A deflector plate is mounted adjacent the outer edge of the two outer burner units and is upwardly bent at about a 45.degree. angle for deflecting infrared energy near the outer edges of the two outer burners toward the outer extremities of the bottom of the plate for producing a uniform surface temperature over the cooking surface.

A common filter for one or more deep fat fryers includes a nozzle in the bottom of each fryer vessel for delivering filtered fat in a non-aerated whirlpool-like flow for flushing dislodged food particles through a drain to a portable filter tank. A pump delivers filtered fat from the filter tank to the nozzle for cleaning and refilling of the vessel.

A temperature control means for a cooking griddle wherein a tubular thermostat is clamped to the bottom of the griddle plate, shielded from direct engagement by the heating medium and having a predetermined portion of the temperature sensing bulb of the thermostat directly exposed to the heating medium for cooperation with the actuating fluid in the thermostat tube so as to operate the on-off switch of the heating medium within a temperature range of about 5 degrees F.

An instant recovery deep fat fryer includes a vessel having a cooking section, of minimized surface area and volume above a heating section arranged for high heat transfer from a plurality of heat exchange tubes. The heating section has inclined extensions that accommodate the heat exchange tubes, which extend beyond the boundary of the cooking section.
