Methods and apparatuses for cutting food products. The apparatus includes an annular-shaped cutting head having at least a first mounting frame surrounding a central axis of the cutting head and a plurality of cutting tools arranged around the central axis of the cutting head and pivotably coupled to the first mounting frame such that each cutting tool has a pivot axis. The method includes deflecting each cutting tool about its pivot axis by engaging first portions of the cutting tools in proximity to the first mounting frame to deflect the first portions a first radial deflection distance relative to the central axis and engaging second portions of the cutting tools to deflect the second portions a second radial deflection distance relative to the central axis. The first and second radial deflection distances can be adjusted individually or in unison.

Apparatuses for cutting food products and methods for operating the same

An apparatus for cutting food products is disclosed. The apparatus includes a cutting head comprising a cutting tool that is rotatable between a plurality of positions to change the cutting thickness of the cutting tool. The cutting head also includes a biasing element that biases the cutting tool in a position, and a moveable stop configured to cooperate with the biasing element to maintain the first cutting tool at any of the plurality of positions. The biasing element may be a mechanical spring.

Apparatus and method for adjusting the cutting thickness of a food cutting apparatus

The invention is an improved process and system for producing a shaped snack chip. A shaping oven, which uses a chain edge conveyor having transverse slats with at least one spring affixed to the slats, is used to convert dough pieces into shaped pre-forms, which can optionally be further dehydrated to form shaped snack chips.

Method for making a shaped snack chip

An extruder die designed to produce a spiral corn-based snack food product with consistent, tight spiral pitch and the resultant food product. The extruder die has a center post parallel to the flow path along with three cone-shaped receiving ports arranged in a cloverleaf pattern around the center post. The die has three curved slots on the output side of the die which are in fluid communication with the cone-shaped receiving ports. At the distal end of each of these slots is a semi-circular tip. The tip has a diameter larger than the width of its associated slot. Further, the tip is located at the apex of a cone-shaped receiving port with which it is in fluid communication, thus providing for the highest flow velocity of the extrudate through the tip. The resultant flow profile produces the consistent spiral shape of the snack product produced by the die design described.

A method and apparatus for causing attrition to an outer surface of a food product to provide a removed portion of the food product and a remainder of the food product. In a first aspect, an abrasive stream contacts the outer surface of the food product, thereby separating at least a portion of the outer surface of the food product from the remainder of the food product to provide the removed portion of the food product. In a second aspect, the apparatus includes a product positioner to position the food product in an attrition zone and a nozzle for discharging the abrasive stream into contact with the food product in the attrition zone. The abrasive stream can be food grade and can include a food grade fluid and a food grade abrasive, for example, air and salt, respectively.

A topping comprising large seasoning bits and a dry adhesive is applied to a cooked chip. The topped, cooked chip is then heated to a temperature such that the dry adhesive undergoes a glass transition and flows down around the bit to the bit and food substrate contact point. The topped, cooked chip is then subjected to changed process conditions, such as cooling, the adhesive hardens, and a bond is formed between the chip and the seasoning bits.

An improved dough-rolling apparatus and method for rolling sheeted dough. The proposed invention comprises a dough-rolling apparatus having a dough sheeter, a sheeting conveyor having a ramped section, a roll-initiating curtain positioned above the ramped section, and a roll-completing curtain positioned above the conveyor and downstream from the roll-initiating conveyor. Sheeted and cut dough pieces are deposited onto a steel mesh, partially-ramped sheeter belt, where two wire-mesh rolling curtains are draped onto the sheeter belt to induce rolling of the dough pieces.

Further, chip preforms' alignment in passing between the two conveyors is maintained.

System and method for monolayer alignment snack chip transfer

The process for making a shaped snack chip uses various components to form a chip having depth such as a bowl-shaped tortilla chip. The chips are formed by sheeting into an initial flat shape. The chips are then passed along for shaping by a mold and plunger conveyor. Once plunged to the mold shape, the chips are reduced in moisture content by baking and frying. After frying, oil is evacuated from the chips whereafter salt and flavoring is applied, if desired, prior to being packaged.

Process for making a shaped snack chip

The system and method for molding a shaped snack chip use various components to form chips having depth such as a bowl-shaped tortilla chip. Essentially flat chip preforms are fed to a series of molds disposed about a mold conveyor. The preforms are then passed along for shaping by a mold and plunger conveyor. A continuous conveyor with plungers extending outward is synchronized to operate in conjunction with the mold conveyor. At desired and determined intervals, a multiple of plungers extend downward and into the molds thereby molding the chip preforms into shaped chips. The shaped chips are evacuated from the molds and subjected to additional processing.
