A method of smoke-infusing proteinaceous foods comprises the following sequential steps: a) enclosing the proteinaceous foods in a vacuum-treating zone; b) introducing smoke directly or indirectly from a smoke generation zone into the vacuum-treating zone; c) subjecting the proteinaceous foods to vacuum purging at a negative pressure in the vacuum-treating zone, thereby infusing smoke into the proteinaceous foods; d) repeating the steps of introducing smoke directly or indirectly from the smoke generation zone into the vacuum-treating zone; subjecting the proteinaceous foods to vacuum purging at a negative pressure in the vacuum-treating zone at least fifty times in pulsed sequences of smoke introduction stage/vacuum purging stage/vacuum release stage for the efficient infusion of smoke into the proteinaceous foods; and e) a post-chill resting cycle of the smoke-infused proteinaceous foods at a suitable temperature and for a suitable period of time. An optional modification to the smoke-infusing process is the addition ofplant material in order to enable the deposition of-derived compounds on the surface of the smoke-infused food.

Method and apparatus for smoke-infusing proteinaceous foods and smoked-infused such proteinaceous food product so-obtained

A method of smoke-infusing proteinaceous foods comprises the following sequential steps: a) enclosing the proteinaceous foods in a vacuum-treating zone; b) introducing smoke directly or indirectly from a smoke generation zone into the vacuum-treating zone; c) subjecting the proteinaceous foods to vacuum purging at a negative pressure in the vacuum-treating zone, thereby infusing smoke into the proteinaceous foods; d) repeating the steps of introducing smoke directly or indirectly from the smoke generation zone into the vacuum-treating zone; subjecting the proteinaceous foods to vacuum purging at a negative pressure in the vacuum-treating zone at least fifty times in pulsed sequences of smoke introduction stage/vacuum purging stage/vacuum release stage for the efficient infusion of smoke into the proteinaceous foods; and e) a post-chill resting cycle of the smoke-infused proteinaceous foods at a suitable temperature and for a suitable period of time.

Method for smoke-infusing crustaceans or mollusks or fish

A processes is provide herein for converting waste bio-product pomace to useful bio-product extracts. The process includes the steps of forming a mixture of water as a solvent and a specified quantity of the waste bio-product pomace. Then optionally adding a suitable quantity of citric acid to the water/waste bio-product mixture. Then heating waste bio-product pomace/water mixture to an elevated temperature below the boiling point of water. Then optionally adding a suitable quantity of sodium metabisulfite to the heated waste bio-product pomace/water mixture Then stirring heated waste bio-product pomace/water mixture for a suitable time to disperse the waste bio-product uniformly in the water solvent. Then cooling the stirred, heated waste bio-product pomace/water mixture to a suitable lower temperature at a rate of about 60&#xb0; C. per hour. Then removing solids from the stirred waste bio-product pomace/water mixture. Then clarifying the cooled stirred water/waste bio-product mixture. Then concentrating the clarifying cooled stirred waste bio-product pomace/water mixture under the influence of a suitable vacuum and at a suitable increased temperature until the concentrate has a BRIX of about 20 to about 22. This provides a concentrated useful bio-product comprising antioxidant-enriched liquids comprised of the natural elements extracted from said waste bio-products.

Plant waste bio-product pomace extract concentrates and processes of producing same

A process for the producing edible protein-containing meal for human and animal consumption and high quality food grade oils from oil seed using iodotrifluoromathane as the solvent is shown. The meal has a significantly improved level of dietary available (absorbable) protein. The process involves the preparation of protein isolates by a procedure which is conducted at room temperature, thus decreases protein degradation and denaturing which is caused by elevated temperatures. The process also provides for extraction of substantially all oils and fats, which interfere with the formation of the protein micelle, from the protein meal providing a cleaner, purer product with high levels of absorbable protein. Such protein isolates can then be used as such or added to formulated foods in order to increase the total protein content of that food. The protein produced and the oils recovered have compositions which are also unique and unobtainable by prior processing methods.

ITFM extraction of oil seeds

Procedures are provided herein for the optimization of the utilization of crustaceans, e.g., whole lobsters, through the inclusion of under-utilized components. The procedure involves firstly, initiating the detachment of the raw edible deep-shoulder myotomal meat from deep-shoulder cartilaginous skeleton attachment. This may be accomplished either by immersing the head-shell in a solution of protease enzymes, or subjecting the head-shell to at least one freeze-thaw cycle. Then, the so-treated head-shell is subjected to vacuum aspiration to remove, and to recover, the raw meat fraction. Procedures are further-described for the utilization of such recovered raw meat fraction, e.g., to provide stuffing and to provide stuffed crustaceans, e.g., lobsters.

Methods are provided for separating the intact shell of hard-shelled crustaceans of any species from the raw edible meat contained therein which is very strongly attached to the shells. The methods each include the first step of initiating the detachment of the raw edible meat from the intact shell by the step of subjecting the intact shell to at least one freeze-thaw cycle, where the thawing is carried out in cold water or cold brine to minimize deterioration of the flavour of the crustacean meat. Then the intact shell is separated from the raw edible meat by several different alternative steps. One alternative step includes subjecting the so-treated intact shell to vacuum aspiration to separate the intact shell from the raw edible crustacean meat, so as to recover the raw edible crustacean meat. These methods may also be used for the recovery of raw edible intact crustacean meat, from easy-to-process clawed lobsters of the Homaridae family, easy-to-process crab, e.g., Snow crab, Maryland Blue crab, Alaska King crab, Dungeness crab, and to lobster-like crustaceans, including some types of prawn, Nephrops norwegicus and freshwater crayfish species. The method is particularly adapted to the processing of hard-to-process clawless Spiny lobster and Rock lobster species of temperate and tropical origin, species of the genera Panulirus, Jasus and Chelonectes.
