The present invention relates to a variant polypeptide having a lipase activity, wherein the polypeptide may be a polypeptide that has an amino acid sequence which has at least 70% identity to a mature amino acid sequence of SEQ ID NO: 1 or SEQ ID NO: 6, wherein the polypeptide comprises an amino acid substitution at position 295 and at least one further amino acid substitution at position 113, 121, 179 and/or 284, wherein the positions are defined with reference to SEQ ID NO: 1 or SEQ ID NO: 6. The invention further relates to a process for preparing a dough wherein a polypeptide as disclosed herein is used and baked product prepared from the dough.

Lipolytic enzyme variants

The disclosure provides a recombinant cell capable of producing a steviol glycoside, wherein the cell comprises a nucleic acid coding for a variant of a parent polypeptide, wherein the variant has steviol glycoside transport mediating activity, wherein the variant comprises an amino acid sequence which, when aligned with the amino acid sequence of the parent polypeptide, comprises at least one modification of the amino acid residue corresponding to any of the amino acids in the amino acid sequence of the parent polypeptide, wherein the variant has an improved ability to produce rebaudioside M and optionally other steviol glycosides extracellularly if compared with the parent polypeptide when measured under the same conditions.

Steviol glycoside transport

The present invention relates to a variant polypeptide having maltogenic alpha-amylase activity wherein the polypeptide comprises an amino acid sequence, which, when aligned with an amino acid sequence of SEQ ID NO: 1, comprises an amino acid substitution F188L/I, S200N, and D261G, and optionally a further amino acid substitution T288P, wherein the amino acid substitutions are determined with reference to SEQ ID NO: 1, and wherein the polypeptide has an amino acid sequence which has at least 70%, 75%, 80%, 85%, 90%, 95%, 96%, 97%, 98%, or at least 99% identity to the amino acid sequence of SEQ ID NO: 1. The invention also relates to a process for the preparation of a dough or a baked product wherein the variant polypeptide is used.

Variant maltogenic alpha-amylase

The invention relates to a variant polypeptide having lactase activity. The invention also relates to a nucleic acid sequence encoding such a variant polypeptide, to a nucleic acid construct comprising said nucleic acid sequence, to a recombinant expression vector comprising said nucleic acid construct and to a recombinant host cell comprising said expression vector. Further, the invention relates to a method for producing a lactase variant via use of such a host cell. Also, the invention relates to a method of producing a lactase polypeptide variant. The invention further relates to a composition comprising a lactase variant, to use of such a lactase variant or to the use of a lactase variant-containing composition in the preparation of a dairy product, to a process for the production of a dairy product and to the resulting dairy product.

Enzyme variants

The present invention relates to a nucleic acid construct comprising: a nucleic acid sequence encoding an ice structuring protein (ISP) comprising the sequence set out in SEQ ID NO: 1 or a sequence at least 80% identical thereto or comprising the sequence set out in amino acids 21 to 261 of SEQ ID NO: 1 or a sequence at least 80% identical thereto; and, linked operably thereto, control sequences permitting expression of the nucleic acid sequence in a filamentous fungal host cell. The construct may be used in a method for the production of an ISP, wherein the ISP is expressed in a filamentous fungal host cell.

Ice structuring protein

The present invention relates to a variant polypeptide having fumarate reductase activity, which has modified NADP(H)-dependent and/or NAD(H)-dependent activity as compared with a reference polypeptide having fumarate reductase activity. Such a variant may be overexpressed in a host cell in order to improve production of a dicarboxylic acid.
