A composition comprising a mixture of xanthan gum, a surfactant and a chelating salt, wherein said surfactant is present in an amount of from about 0.1% to about 3.0% by weight of the total weight of the composition, and wherein said chelating salt is present in an amount of from about 0.1% to about 3.0% by weight of the total weight of the composition is provided.

Fast hydrating dust-free xanthan gum

A xanthan gum composition is prepared that is useful as a thickener and suspension agent in food and pharmaceutical applications. Comprised of xanthan gum and small amount of a food grade emulsifier, the composition is both shelf stable, dust-free and fast hydrating thereby providing a product that is easily assimilated into its end product uses with fewer steps and costs of manufacture.

A low fat, very low fat or fat-free emulsion-simulating food product is prepared by adding tricalcium phosphate to develop an opaqueness and smoothness in the food and to reduce gloppiness in foods containing gum, especially xanthan.
