The present invention provides processes for preparing dough which comprises at least one anti-staling amylase and at least one peptidase. In addition, the present invention provides baked products produced there from which have a desirable degree of softness and improved springiness.

Process for preparing a baked product with anti-staling amylase and peptidase

The invention relates to a novel 3D structure encoding aprotease, as well as to variants of parent protease homologous toproteases, preferably of improved thermostability and/or with an amended temperature activity profile. The invention also relates to DNA sequences encoding such variants, their production in a recombinant host cell, as well as methods of using the variants, in particular within the field of animal feed and detergents. The invention furthermore relates to methods of generating and preparing protease variants of amended properties.

Protease variants

Proteases derived fromsubsp.DSM 43235,DSM 15649,(previously) DSM 14010sp. DSM 16424,DSM 44657 andDSM 44048, as well as homologous proteases; their recombinant production in various hosts, including transgenic plants and non-human animals, and their use in animal feed and detergents. The proteases are acid-stable, alkali-stable, and/or thermostable.

Proteases

The present invention relates to isolated proteases of the RP-II type and variants of RP-II proteases exhibiting improved properties in comparison to the parent RP-II protease, DNA constructs and vectors coding for the expression of said proteases and variants, host cells capable of expressing the proteases and variants from the DNA constructs, as well as a method of producing them by cultivating said host cells. The proteases may advantageously be used as constituents in detergent compositions and additives, optionally in combination with other enzymes such as proteases, lipases, cellulases, amylases, peroxidases or oxidases.

Phytase polypeptides

The present invention relates to proteases of high specific activity homologous to proteases derived from, and the production thereof by the wild-type, and in recombinant host cells including transgenic plants and non-human transgenic animals. The proteases are effective in animal feed, and detergents. Characteristic structural features of relevance for the specific activity of these proteases of peptidase family S2A or S1E are disclosed.

An esterase isolated fromis capable of stereoselective hydrolysis of chiral esters and also has arylesterase activity (EC 3.1.1.2) and feruloyl esterase activity (EC 3.1.1.73). The esterase has only a limited homology to known amino acid sequences.

The present invention relates to isolated polypeptides having polypeptide having 2,6-&bgr;-D-fructan hydrolase activity and isolated nucleic acid sequences encoding the polypeptides. The invention also relates to nucleic acid constructs, vectors, and host cells comprising the nucleic acid sequences as well as methods for producing and using the polypeptides.
