The invention concerns a method for removing skin from the bodies of animals, preferably of fowls, and a device for implementing said method. Known devices comprise skin-removing rollers, designed to enable height adjustment via a control cam. Said devices, however, have the disadvantage of not enabling the rollers to be accurately positioned on the bodies of animals of different shapes, in particular on bodies with curves. The invention aims at supplying a device and a method ensuring optimal positioning enabling the skin to be removed without damage. This is achieved by the fact that the inventive device comprises skin-removing rollers with two degrees of freedom, thereby enabling said rollers to be optimally positioned, independently of the size of the animal body.

An apparatus for detaching wings from a poultry body is described in which the detachment is effected by means of three pairs of separating tools with varying arrangements and forms of knife blades. The poultry bodies are prepared as front halves and pass through the processing areas of the separating tools fixed on supporting saddles which are moved forward by conveying means and convey the poultry body with the neck portion leading and the breast portion uppermost. This 'three-cut' separation procedure allows an extremely economical detachment of the wing and greatly increases the yield of breast fillet meat while avoiding bone splinters in the region of attachment of the wings.

An apparatus for skinning fish includes a pressure pad carrying an oscillating knife blade and defining a presser surface which faces the circumferential surface of a skinning roller, the pressure pad being mounted to yield against spring force. The oscillating knife blade is guided in a pocket formed in the pressure pad. This arrangement makes it possible to skin fish fillets without any splitting of the tail portion.
