Described are compositions and methods relating to enzyme-containing, hot-melt-prepared granules produced from a starting material that contains an amount of water sufficient to denature the enzyme under hot-melt processing conditions. The resulting granules are particularly useful in consumer and industrial products, such as detergent, animal feed, food, personal care and agricultural compositions.

The invention provides small enzyme-containing granules having an inorganic salt core and an enzyme-containing layer coated over the core, and methods for producing such granules. The majority of the enzyme granules are less than 300 &#x3bc;m in diameter. The granules are suitable for incorporation into compositions such as cleaning, textile processing, and animal feed compositions.

The invention provides methods, compositions, systems, and kits that include an enzyme/substrate co-delivery system. The present invention provides an improved coating material for use with particles, such as enzyme granules, and the like. In particular, the present invention provides a modified PVA, as well as particles or granules that include such coating. The PVA is modified by substituting hydrophilic moieties for the hydroxyl or alcohol groups of the PVA. Substitution may be achieved with hydrophilic acids, amines, thiols, or combinations thereof.

There is provided a process for the extraction of water soluble biomaterials such as enzymes or proteins into carbon dioxide utilizing certain carbon dioxide-soluble surfactants. Also provided are certain carbon dioxide-soluble surfactants useful in the extraction of proteins. The surfactants are selected from fluoroether sulfate, fluoroether-polyethylene glycol block copolymer, fluoroether-functional sorbitol, and fluoroether dithiocarbamate chelate.
