The present invention provides a soy protein containing composition for use in formulating confectionary food bars. In particular, the soy protein containing composition is formed of two types of protein materials, a structural protein material and a binding protein material. The protein composition provides a soft, palatable texture to confectionary food bars in which it is incorporated. The present invention is also directed to soft confectionary food bar compositions containing a structural soy protein material and a binding soy protein material, and processes for making such food bar compositions.

A soy protein isolate and method for preparing the same are shown. The novel soy protein isolate possesses excellent suspension stability and flavor. The process used to produce the soy protein isolate includes an enzyme hydrolysis process, and the resulting soy protein isolate can be used in acidic beverage formulations.

Soy protein isolate

This invention is directed to an alkaline earth metal fortified vegetable protein composition dispersed in an aqueous medium, comprising an aqueous slurry of a vegetable protein material and a hydrated gel of an alkaline earth metal phosphate salt. The alkaline earth metal content of the alkaline earth metal fortified vegetable protein composition is from about 3&#x2013;12% by weight, on a dry basis and further, the alkaline earth metal fortified vegetable protein composition forms a stable suspension in said aqueous medium. The invention is also directed to a process for producing a mineral enriched protein composition for use in the production of foodstuffs. This process is carried forth by combining an aqueous slurry of a vegetable protein material and a hydrated gel of an alkaline earth metal phosphate salt. The hydrated gel of an alkaline earth metal phosphate salt is prepared by forming an aqueous slurry of an alkaline earth metal hydroxide wherein the alkaline earth metal hydroxide forms at least 2% by weight of the slurry, rapidly adding phosphoric acid to the slurry of the alkaline earth metal hydroxide; and vigorously mixing and homogenizing the slurry of the alkaline earth metal hydroxide and the phosphoric acid to form the gel, wherein the gel has a solids content of at least 3.0% by weight and the gel is capable of forming a stable aqueous suspension in water.

Composition and process for the production of a vegetable protein composition containing an alkaline earth metal salt

A short chain peptide material is provided containing a peptide material derived from a protein material. At least a majority of the peptides in the peptide material have a peptide chain length of 7 peptides or less. The peptide material is at least 95% soluble in an aqueous solution having a pH at which the protein material from which the peptide material is derived is insoluble. A process for forming the short chain peptide material is also provided. A slurry is formed of a protein material at a pH at which the protein material is substantially insoluble. The protein material is contacted with an enzyme having substantial endopeptidase activity and substantial exopeptidase activity at a temperature and for a time sufficient to form the peptide material of the invention.

Short-chained peptide material

A method of producing a mineral enriched protein composition for use in the production of liquid foodstuffs comprising: Forming a hydrated gel of an alkaline earth salt, such as a calcium salt and adding the hydrated gel to a slurry of a soy protein isolate to form a mineral enriched soy protein composition. The composition can then be dried and upon resuspension in a liquid foodstuff results in improved suspension of the mineral in the foodstuff.
