The present invention relates to a method for controlling a parameter set of a perishable product. According to the invention it is contemplated that an identification (ID) representing the perishable product is detected by a reading device, that the identification of the ID prompts a detection of the parameter set of the product, that a comparison between the identified parameter set and a reference parameter set is carried out, and that a control signal is generated and represented based on the comparison. The present invention further relates to a control system designed for implementing the method.

This invention relates to an air extraction device ( ) for a work station ( ), especially one where food is subjected to heat, for example a grill. One air inlet ( ) each is provided on each side of the work station ( ), said inlets being connected to a fan ( ) and a filter system ( ) and communicating with them and with an area ( ) disposed above the work station ( ) in a closed air cycle ( ) that produces an air blast ( ) in said area. About 75% of the air are continuously discharged from the air cycle via an air discharge ( ) so that only 25% of the air form the air blast ( ). The discharged portion of the air is continuously replaced by taking in ambient air via the down-stream air inlet ( ) and/or via a separate, additional air inlet ( ). The filter system ( ) is provided with a grease trap filter ( ) upstream of the fan and an odor filter ( ) downstream of the fan. The inventive air extraction device prevents odors and grease from reaching the surroundings of the work station and allows for a simple and unproblematic maintenance of the filters.
