A method of making a filter, the resulting filter, and a method of using the filter to filter proteins from solution are described. The method includes contacting a porous, polymeric substrate with a transfer liquid comprising a solvent(s) and a charged polymeric solute. The transfer liquid and the polymeric substrate have a Hansen Solubility Parameter ('HSP') distance of from about 10 to about 35. Contacting the polymeric substrate with the transfer solution causes the polymeric substrate to accept the charged polymeric solute by diffusion transfer, thereby yielding a functionalized filter medium. Removal of the transfer liquid from the polymeric substrate traps the charged polymeric solute on the surface of the polymeric substrate.

Methods and compositions involving whey protein isolates

The present invention concerns methods and compositions that involve whey protein isolates. Methods of the invention include purification processes for preparing whey proteins that are substantially nondenatured across a range of pH, including their isoelectric points. As such, they have low turbidity in solution across a wide range of pH values. Whey protein isolates can be integrated into compositions and solutions that have nutritional, pharmaceutical, and other applications.

It is disclosed here that a protein with a heat-labile specific binding activity can be stabilized with a saccharide compound with regard to the binding activity. To heat-stabilize the protein, it is mixed with a saccharide compound in a liquid suspension and the suspension is then dried to produce a solid that contains the protein and the saccharide. The saccharide compounds that possess the protein heat-stabilization activity include monosaccharides, disaccharides, polysaccharides, alkylated monosaccharides, alkylated disaccharides, alkylated polysaccharides, monosaccharide alcohols and alkylated monosaccharide alcohols.

The present invention relates to a process for producing a substantially pure &kgr;-casein macropeptide fraction having nutraceutical properties by contacting whey with an anion exchanger to yield a bound whey protein fraction enriched in &kgr;-casein macropeptide fraction and an unbound whey protein fraction depleted in &kgr;-casein macropeptide; and contacting the bound whey protein fraction enriched in &kgr;-casein macropeptide fraction with an adsorbent, specifically an immobilized metal affinity adsorbent, to separate out the substantially pure &kgr;-casein macropeptide fraction.
