The invention relates to an apparatus, designed and adapted for machine processing of decapitated and at least substantially gutted fish, transported tail-first in transport direction T on a transport path, comprising a conveying means which conveys the fish along the transport path and a cutting device for removing the flesh from the flank bones of the bone structure of a fish after cutting free the ventral and dorsal spokes, wherein the cutting device comprises a pair of circular knives which can be driven so as to rotate about a point of rotation D and which are arranged on opposite sides of the transport path and are designed to be adjustable relative to the position of the fish and thus to the bone structure, which is characterized in that each circular knife is allocated a means that is designed and configured to hold down at least some of the flank bones during the removal process of the flesh from the bone structure. The invention relates to an apparatus for filleting beheaded and gutted fish, comprising a cutting unit for filleting the fish, wherein the cutting unit has at least one pair of circular blades, an endlessly rotating transport conveyor having at least one saddle-shaped supporting body for receiving the fish and conveying them through the cutting unit tail first, wherein each supporting body has a supporting edge for making a form-locking connection with the center bone of the fish to be processed, and a device for centering the center bone in relation to the supporting body, which is distinguished in that a means for lifting the center bone of the fish off the supporting edge of the supporting body is provided, which is arranged in the region of the device for centering the center bone. Apparatus and method for filleting beheaded and gutted fish

An apparatus to cut free flank bones of a beheaded, slaughtered fish having an open abdominal cavity includes a transport saddle to transport the fish in a direction of fish travel. The saddle includes an upper bone guide and a lower bone guide. The apparatus additionally includes a separating unit moveable back and forth from a standby position into a working position having a separating device and a counter support. The separating device includes a rotating circular knife to detach a fish fillet from the flank bones and the counter support includes a fixed element and is associated with the separating device. The counter support and separating device are movable about two axes, the fixed element being movable relative to the circular knife and independently thereof.

Tool, device, and method for gutting fish opened at the stomach cavity

A device for cutting up the wings of poultry bodies into their component parts is described. The device comprises a saddle conveyor for receiving the poultry bodies in the form of front halves with wings. The wings are engaged and synchronously accompanied by auxiliary conveyors and guided into a guide system where they are cut up by means of 'anatomic' cuts, i.e. cuts running through the joints. The device is adapted to by integrated into a processing line for filleting breast meat or the like.

Device for cutting up wings of poultry bodies

An apparatus is described for processing the bodies of slaughtered poultry and thereby removing meat from the skeleton, specifically in the region of the clavicle (clavicula). The apparatus has a conveyor with saddles for carrying and conveying the poultry body with the breastbone directed upwards and the clavicle leading. In order to remove the meat from the branches of the clavicle, a block having groove-shaped recesses is inserted between the clavicle branches such that the branches slip into the recesses and lie flush with the flank surfaces. Scraping knives are then guided over the flank surfaces to separate the meat from the clavicle. In order to avoid the scraping knives from catching broken or stretched clavicles and thus push bone splinters into the meat, pressing elements are provided which operate directly upstream of the scraping knives and ensure that any broken bone pieces are pushed together with the rest of the clavicle branches into the recesses.
