A lactone compound is represented by general formula (A), and an ether compound is represented by general formula (B). In formula (A), R is a hydrogen atom or R1. When R is a hydrogen atom, R' is R1, the carbon bond (1) is a single bond or a double bond, and the carbon bond (2) is a single bond. When R is R1, R&#x2032; is a hydrogen atom or R1, both the carbon bonds (1) and (2) are a single bond, or one of them is a double bond and the other is a single bond. In formula (B), R&#x2033; is R1. R1 represents a specific alkyl group, a specific alkenyl group, a specific alkynyl group, or an aryl group. In formulas (A) and (B), n is 0 or 1.

A simplified production method of stereoisomer of theaspiran having high optical purity has been desired. An alcohol compound having a specific skeleton is enantioselectively esterified with an enzyme, or an ester compound having a specific skeleton is enantioselectively hydrolyzed with an enzyme. The resultant optically active ester or optically active alcohol is used. Thus, optically active theaspiran having a desired configuration and having a high optical purity is obtained in a satisfactory yield.

The compound (I) has an excellent sandalwood oil odor.

(E)-(R)-2-alkyl-4-(2,2,3,-Trimethylcyclopent-3-en-1-yl)-2-buten-1-ol,

A perfume containing (6E)-2,3-dihydrofarnesol represented by the following general formula (I): ##STR1## which has a purity of the trans form of more than 50% by weight, is disclosed. A muguet perfume containing the above compound is excellent in fragrance qualities and having a high safety without any sensitization and an antimicrobial activity.

A process whereby trans-3-isocamphylcyclohexanol, which is useful as a perfume ingredient, can be produced on an industrially available scale, at a low cost and at a high stereoselectivity, is disclosed. The process comprises hydrogenating 3-isocamphylcyclohexanone represented by the following formula (I): ##STR1## by using a ruthenium/phosphine complex as a catalyst in the presence of a base containing an alkali metal or an alkaline earth metal and an amine.
