This pinching-shaping device includes cylindrical tools, each having a central axis of tool rotation, the central axes being parallel and the outer peripheries of the tools applied tangentially against one another to pinch-shape a strand tangentially introduced between the tools during rotation. The outer periphery of each tool has radially projecting blades distributed around the central axis, each providing a pinching surface. The pinching surface extends between first and second ends inclined to the central axis. The blades of each tool are distributed following the outer periphery, alternating inclination. When a blade of the first tool is radially interposed between the two tools during the rotation, it is radially aligned with one of the blades of the second tool, the pinching surface inclined in a complementary manner to the pinching surface of first tool's blade, pinching the strand between pinching surfaces of these two aligned blades.

The continuous treatment device () includes a tank () of elongated shape and that determines a mixing chamber () which includes, at a first end, at least one inlet orifice () for the raw material and, at a second end, at least one outlet orifice () for the treated material, and also, between these orifices, at least one agitator shaft () equipped with blades () suitable for continuously mixing and advancing the material in the mixing chamber () from the inlet orifice to the outlet orifice. The extrusion die () is provided with a bore () for forming a continuous tubular string of the food product in a direction forming an angle with the axis of the extrusion machine (). The invention provides a method of continuously preparing caseinate from milk proteins in non-soluble powder form in an extruder machine having two co-rotating and interpenetrating screws into which water and an alkaline reagent are introduced, and the mixture formed by the milk proteins, the water, and the alkaline reagent is subjected to a plurality of steps of kneading under pressure and of shearing with the temperature rising to obtain at the outlet from the extruder machine a caseinate paste, the caseinate paste is cooled to bring its temperature to below 20&#xb0; C., a continuous thin sheet of caseinate paste is formed, and the sheet is cut up into a plurality of parallel strips, and these strips are cut up into small-sized pieces of caseinate. The invention also provides an installation for continuously preparing caseinate.
