The present invention relates generally to the production of steviol glycosides. Provided is a method for enzymatically providing a modified steviol glycoside, comprising incubating a steviol glycoside substrate in the presence of sucrose and the glucansucrase GTF180 ofstrain 180, or a mutant thereof having the desired transglycosylation activity. Also provided are modified steviol glycosides obtainable by a method of the invention, and the use thereof as low-glycemic sweetener.

This protein is derived from lactobacilli, which are food-grade microorganisms with the Generally Recognized As Safe (GRAS) status. The protein produces a glucan with a unique structure having 4-linked, 6-linked and 4,6-linked anhydroglucose units or in the presence of suitable acceptors, oligosaccharides. According to the invention lactobacilli capable of producing this glucan using the novel glucosyltransferase can be used as a probiotic or symbiotic.

One of these proteins produces an inulin and fructo-oligosaccharides, while the other produces a levan and fructo-oligosaccharides. According to the invention lactobacilli capable of producing an inulin and/or a levan and/or fructo-oligosaccharides using one or both of the fructosyltransferases can be used as a probiotic or a symbiotic.
