A process for manufacturing a tridimensional pasta product by preparing a mixture of cereal flour or semolina and water; kneading the mixture to obtain a dough; injecting the dough into a mold having a tri-dimensional shape under conditions such that the dough undergoes substantially no expansion in the mold during injection; and removing the dough from the mold to provide an injection molded pasta product having the tri-dimensional shape. These molded tridimensional pasta products possess organoleptic properties which are superior to those of traditional pasta products.

Long, thin and tubular quick cooking pasta having, in transverse section, a wall thickness of between 0.60 and 1.1 mm and teeth on the inner surface of the tube, which are longitudinal and parallel, having a height of between 0.3 and 1.6 mm and having a height to wall thickness ratio of between 0.4 and 2.

Twisted quick cooking pasta having, in transverse section, the shape of a helix having at least one blade attached to an axis, the axis being hollow, the wall thickness of the axis and of the blade or blades being between 0.3 and 1.1 mm, and the degree of twisting being such that it has a density of between 0.2 and 0.7 g/cm.sup.3, the volume being defined as the cylindrical space occupied by the pasta.
