The present invention relates to isolated polypeptides having phytase activity, the corresponding cloned DNA sequences, a process for preparing such polypeptides, and the use thereof for a number of industrial applications. In particular, the invention relates to phytases derived from the phyllum Basidiomycota, phytases of certain consensus sequences and fungal 6-phytases.

Phytase polypeptides

The present invention relates to transglutaminases and transglutaminase preparations obtained from lower fungi belonging to the class Oomycetes and unprecedented high-level expression is achievable by growing these coenocytium forming organisms, especially the strainssp.,(or),and; and a recombinant transglutaminase has been cloned and expressed, the enzyme and enzyme preparations being useful for cross-linking proteins, e.g. in flour, baked products, meat products, fish products, cosmetics, cheese, milk products, gelled food products and leather finishing, or as a glutaminase, e.g. in bread and other baked glutein-containing food products.

The invention relates to a method for modifying animal feed, in particular animal feed containing plant material such as soybean, by adding to the animal feed at least one galactanase enzym, to a method for obtaining a DNA sequence encoding a galactanase enzyme or a portion thereof, and to isolated polynucleotide molecules encoding polypeptides having galactanase activity.

The novel phytase is derived from Peniophora lycii and has some interesting features, such as high initial affinity for the 6-position of phytic acid, a high intial rate of liberating phosphate from phytic acid and an exceptionally high specific activity.
