A new .beta.-galactosidase is now provided which is highly effective to digest lactose and stable at acidic pH values and thermally stable. The .beta.-galactosidase is produced by Penicillium multicolor in high yield and is isolated from the culture medium of this microorganism in an inexpensive and easy way.

2-Alkylbenzanilide is produced by reacting an alkyl 2-alkylbenzoate having the formula ##STR1## wherein X represents a lower alkyl group and R represents a lower alkyl group with an aniline having the formula ##STR2## wherein Y represents hydrogen atom, an alkoxy, alkenyloxy, alkynyloxy, benzyloxy or halobenzyloxy group in the presence of an alcoholate in a solvent which is hardly azeotropically distilled with the by-product of alcohol.

Process for producing 2-alkylbenzanilide

A process for producing a mono- or di-alkali metal salt or alkaline earth metal salt of L-ascorbic acid-2-sulfate which comprises reacting L-ascorbic acid in which the 5 and 6 positions are protected by a ketone or aldehyde, with dimethyl formamide-sulfur trioxide complex, which is produced by a reaction of dimethyl formamide with chlorosulfonic acid and a dehydrohalogenating agent such as pyridine, triethylamine, dimethyl aniline, which is a tertiary amine so as to produce a sulfate, and neutralizing the product with an alkali metal hydroxide or an alkaline earth metal hydroxide, and removing said protecting aldehyde or ketone at 5- and 6-positions.

Process for producing l-ascorbic acid-2-sulfate

A process for producing a mono- or di-alkali metal salt or alkaline earth metal salt of L-ascorbic acid-2-sulfate which comprises reacting L-ascorbic acid in which the 5 and 6 positions are protected by a ketone or aldehyde, with dimethyl formamide-sulfur trioxide complex, and neutralizing the product with an alkali metal hydroxide or an alkaline earth metal hydroxide, and removing said protecting aldehyde or ketone at 5-and 6-positions.
