A milk calcium composition which is highly dispersible and tasty can be obtained by adjusting the pH of a permeate containing lactic acid and lactic acid ion, which was obtained by treating whey with a UF membrane or NF membrane, to recover milk calcium as a slurry-like precipitate and then admixing this milk calcium with milk proteins.

Addition of a specific sugar compound to an iron-containing protein composition solution can provide an excellent freezing and thawing stability and restrained precipitate productivity in a thawed solution of its frozen product and increase the efficiency in the use of the iron-containing protein useful for enrichment of iron in a food or drink, production of iron preparations.

A processed whey protein with an improved shelf life comprising partially heat-denatured whey protein and casein protein is provided. The partially heat-denatured whey protein can be prepared by heating a solution with a protein concentration of 0.5 to 15% by weight and pH 6-8 at 55 to 120&deg; C. for 1 to 120 minutes. A process for the preparation of processed whey protein is also provided and comprises adding casein protein to partially heat-denatured whey protein, or adding casein protein to non-denatured whey protein and heating the mixture to partially denature the non-denatured whey protein. The processed whey protein has an improved shelf life. The gel obtained from the processed whey protein exhibits high water retention capacity and superior elasticity. The product is useful as a raw material of foods.

A carbonate- and/or bicarbonate-iron-whey-proteolysate complex includes 1 to 1,000 atoms of iron and one or more molecules of carbonate and/or bicarbonate per one molecule of whey-protein as measured before whey proteolysis, and exhibits no specific iron taste. The carbonate- and/or bicarbonate-iron-whey proteolysate complex is used in drugs, foods, drinks, and animal feed for the purposes of an iron supplement for treatment and prevention of anemia.

Lactoperoxidase, secretory component and lactoferrin are separated in high purity from milk and related materials such as whey with a single cation exchange resin. After adsorption on the cation exchange resin, elution is carried out with an aqueous solution having an ionic strength and pH selected to elute each separately. Lactoperoxidase is eluted first, secretory component second and lactoferrin last. Each is obtained in a purity of about 80% or greater. The cation exchange resin can be a cross-linked polysaccharide, cellulose or an acrylamide resin having carboxyl, sulfonic acid or phosphoric acid functional groups which may be attached with a spacer. The separated lactoperoxidase, secretory component and lactoferrin are biologically active and can be used in pharmaceuticals, cosmetics, foods, drinks and feeds.

A rotary column is rotatably mounted on a hollow shaft having orifices and the shaft is journaled in a reaction vessel. The rotary column has an outer net around the shaft and a space defined by this outer net within the rotary column is divided by partition plates provided with many through-holes into several compartments to be loaded with carriers and immobilized enzymes. The reaction vessel is provided radially outside the compartments with a top cover so that carriers and immobilized enzymes may be easily and evenly loaded into the rotary column. An end surface of the rotary column that is remote from the drive mechanism is provided with a lateral cover. There are provided hydraulic cylinders to tilt the rotary column.
