Provided is an oil or fat composition, which has an MCPD-FS content X (ppm) and a hydroxyl value Y (mg-KOH/g) satisfying a relationship of the following expression (1), the content X being measured by a Deutsche Gesellschaft f&#xfc;r Fettwissenschaft (DGF) standard method C-III 18(09), and has a content (%) of trans isomers of linoleic acids in constituent fatty acids of an oil or fat, of 2 or more.&#x2267;1.25+4 where&#x2266;88&#x2003;&#x2003;(1).

Provided is an oil or fat composition, which has an MCPD-FS content (ppm) of 13 ppm or less, the content being measured by a Deutsche Gesellschaft f&#xfc;r Fettwissenschaft (DGF) standard method C-III 18(09), has a diacylglycerol content of 15 mass % or more, and is subjected to deodorization treatment.

The present invention relates to a process for producing oils and fats rich in diacylglycerol by subjecting fatty acids which are obtainable by hydrolyzing raw material oils and fats, to esterification with glycerin, wherein the process comprises decreasing an anisidine value of greater than 6 of the raw material oils and fats or reaction intermediates, by 20% or more. By using the process of the present invention, even in the case of using a raw material having an anisidine value which is likely to increase in the production processes for raw material oils and fats or for oils and fats rich in diacylglycerol, the stability of the final product oils and fats rich in diacylglycerol is enhanced, and coloration is suppressed, so that products having excellent external appearance can be obtained.

Process for producing oil and fat rich in diacylglycerol

Provided is a fat or oil composition containing the following components (A), (B) and (C): (A) 100 parts by weight of a fat or oil containing from 0.1 to 10 wt. % of a monoglycerol monofatty acid ester, from 1 to 64.9 wt. % of a monoglycerol trifatty acid ester, and from 35 to 98.9 wt. % of a monoglycerol difatty acid ester having an unsaturated fatty acid content, in fatty acid components, of from 80 to 100 wt. %; (B) from 0.1 to 3.0 parts by weight of a diglycerol fatty acid ester containing from 40 to 100% of a difatty acid ester having an unsaturated fatty acid content, in the fatty acid components, of from 70 to 100 wt. %; and (C) from 0.01 to 2 parts by weight of an antioxidant.
