Various systems and methods are provided for the manufacture of sausages. In one example, a method for manufacturing sausages with a filling machine comprises ejecting a mass through a filling tube into a sausage casing ruffled on the filling tube, and exerting a brake force on the sausage casing via a sausage casing brake on a braking area of a brake ring pressing onto the sausage casing, wherein the braking area extends around a longitudinal axis of the filling tube such that the braking area presses onto a part, and not the entirety, of a circumference of the sausage casing in a plane perpendicular to the longitudinal axis, and wherein the brake force is distributed in a direction along the longitudinal axis.

An apparatus for a sausage-casing-sensitive division of stuffed sausage strands, having at least one pair of dividing elements for dividing the stuffed sausage strand and at least two guide elements between which the stuffed sausage strand is conveyed in the conveying direction. The distance between the guide elements can be adjusted in dependence upon the sausage caliber.

Apparatus and method for a sausage-casing-sensitive division of stuffed sausage strands

A method and a device for separating a sausage chain into single sausages, where filled, portioned sausages are initially transported with a first transport device and with a second transport device arranged behind the first transport device in the transport direction T. The portioning point between two consecutively arranged sausages is enlarged due to the transport speed of the second transport device being faster at least intermittently than the transport speed of the first transport device. The sausage chain is then parted at the portioning point in the second transport device.
