An improved, slide plate-type patty forming apparatus (20) is provided which preferably includes a reciprocating slide plate (60) with a removable, multiple piston and cavity head (78) adapted to move between a retracted meat-filling position wherein respective patty forming cavities (90) are filled with meat to an extended patty-discharging position wherein formed meat patties (264) are ejected. Each of the patty forming pistons (96) is equipped with a porous bottom plate (104) formed of sintered metal or ceramic, an appropriate compressed air passageways (120, 122, 106) are provided for delivery of air through the bottom plate (104) for cleanly ejecting the formed patty (264). Adjusting mechanism (26) for altering the thickness of formed patties (264) includes a plurality of adjusting units (166) each equipped with a vertically shiftable, piston-engaging foot (176); movement of the feet (176) in unison is effected by means of handwheel (164) and connecting gear train (162, 200, 194, 192, 174). Individual variance of respective patty forming stations can also be accomplished by gear disengagement and manual adjustment.

Slide plate patty forming apparatus

A compact, relatively low cost twin piston pump (20) especially adapted for the pumping of foods (e.g. juices, puddings or particulates such as stews and chilies) is provided which includes quick detach yoke and clevis assemblies (108, 124, 110, 126) connecting the reciprocable pistons (100, 102) with their associated hydraulic cylinders (116, 118), thereby permitting quick cleanup of the machine (20). A jacking screw plate (136) is used for forward mounting of the piston and cylinder assemblies (84, 86, 116, 118) coupled with the sleeves (42, 44) and associated pistons (100, 102). This permits precise adjustment of the working components of the machine, while eliminating expensive bearings and heavy duty framing members. The pump (20) is also provided with a slide plate-type valve (38, 184) for controlling output of product from the pump (20). In one valve embodiment (184) a two-part metallic slide plate assembly (192, 200) is sandwiched between a pair of apertured nylon plates (186). One of the slide plate parts (200) is of lesser thickness than the primary part (192), so as to permit limited fore-and-aft movement of the part (200) for sealing purposes. A unique hydraulic system employing a master pressure reducing valve (222) and a slaved pressure reducing valve (224) is employed for creating a pressure differential across the part (200) in order to bias the same for sealing purposes.

Compact twin piston pump

A compact, relatively low cost twin piston pump (20) especially adapted for the pumping of foods (e.g. juices, puddings or particulates such as stews and chilies) is provided which includes quick detach yoke and clevis assemblies (108, 124, 110, 126) connecting the reciprocable pistons (100, 102) with their associated hydraulic cylinders (116, 118), thereby permitting quick cleanup of the machine (20). A jacking screw plate (136) is used for forward mounting of the piston and cylinder assemblies (84, 86, 116, 118) coupled with the sleeves (42, 44) and associated pistons (100, 102). This permits precise adjustment of the working components of the machine, while eliminating expensive bearings and heavy ducy framing members. The pump (20) is also provided with a slide plate-type valve (38, 184) for controlling output of product from the pump (20). In one valve embodiment (184) a two-part metallic slide plate assembly (192, 200) is sandwiched between a pair of apertured nylon plates (186). One of the slide plate parts (200) is of lesser thickness than the primary part (192), so as to permit limited fore-and-aft movement of the part (200) for sealing purposes. A unique hydraulic system employing a master pressure reducing valve (222) and a slaved pressure reducing valve (224) is employed for creating a pressure differential across the part (200) in order to bias the same for sealing purposes.

A meat emulsification apparatus and method are provided which allow for in-line emulsification of meat materials without an intermediate conveyor belt or stuffing pump between an emulsifier and casing means and which prevent contact between ambient air and meat materials and products. The preferred apparatus includes a piston-type meat pump for supplying and deaerating meat material; an emulsifier for emulsifying the meat material to produce a meat emulsion; product casing equipment; an imperforate conduit directly operably coupling the emulsifier with the casing equipment while preventing ambient-air contact with the emulsion; and an accumulator operably coupled with the emulsifier and the casing equipment for accumulating and discharging emulsion. In addition, water is advantageously injected into the deaerated meat conduit upstream of the emulsifier.

Anaerobic meat emulsification apparatus

A jet-knife assembly for meats or like products is provided which assures even, predictable grinding with a minimum of objectionable fines or agglomerated strings, so as to yield final products of consistent dimensions and characteristics. The overall assembly preferably includes a plate presenting only a single set of circularly arrayed apertures therethrough, together with a cooperating, multiple-blade, rotating knife adjacent the plate; the knife blades each have elongated fluid-conveying channels along the operating faces thereof, which are sized relative to the plate apertures so that the cross-sectional area of the channel is always greater than the total plate open area in communication with the channel during blade rotation. Pressurized steam or air is directed to the blade channels during operations, so that as the knife rotates and blade channels come into communication with the plate apertures, product is expelled or 'popped' out of the plate apertures. Provision of non-bridging blade channels assures substantially constant pressure conditions at each plate aperture to yield the most consistent final products.
