An automatic cooking medium level control system for a cooking apparatus, e.g., a fryer, may include a cooking vessel having a first temperature sensor at a first level of the cooking vessel and a second temperature sensor at a second level of the cooking vessel. A reservoir holding a cooking medium, such as cooking oil, may be in fluid communication with the cooking vessel. A controller may monitor temperature data from the first and second temperature sensors to determine whether the level of cooking oil in the cooking vessel has lowered. Upon determining that the cooking oil level has lowered, the controller may actuate a supply mechanism, such as a pump, which may be disposed on a fluid communication path between the reservoir and cooking vessel, which may enable the introduction of cooking medium from the reservoir to the to the cooking vessel.

Automatic cooking medium level control systems and methods

A system for delivering a cooking medium of a cooking apparatus includes one or more cooking vessels. The system also includes a drain manifold in fluid communication with the cooking vessel, and a fill manifold having input valves, and output valves in fluid communication with a corresponding cooking vessel. A first flow path is connected to the fill manifold. A filter container selectively is in fluid communication with the fill manifold. A filter pump is positioned between the filter container and the fill manifold and conveys a recycled cooking medium. An overflow pump selectively is in fluid communication with the fill manifold via a second flow path and a portion of the first flow path. The overflow pump conveys a new cooking medium to the fill manifold. The first flow path conveys one of the recycled cooking medium and the new cooking medium to the fill manifold.

Cooking medium systems having a single fill manifold, and methods of supplying a cooking medium using such systems

A clip for securing a plurality of tubes to each other includes a rectangular separator plate and a first concave arm and a second concave arm. The separator plate has a first edge and a second edge. The first concave arm has a first end that is integrally formed with the first edge. A second end of the first concave arm includes a first tip that curls inwardly to grasp a first tube. A second concave arm has a second end that is integrally formed with the second edge. A second end of the second concave arm includes a second tip that curls inwardly to grasp a second tube.

Heater and heat exchanger retaining clips

In one embodiment of the present invention, a lifting lid assembly for raising or lowering a lifting lid of a cooking vessel is described. The lifting lid assembly has a lifting lid, a first shaft and a second shaft. The first shaft and the second shaft are positioned on a first side and a second side of the lifting lid, respectively, where the first side is opposite the second side, each shaft supports the lifting lid, and an upper portion of each shaft is secured platform to the lifting lid. The lifting lid assembly further has a first and a second platform, which are secured to a lower portion of the first shaft and the second shaft, respectively, and a first cable and a second cable connected to the first platform and the second platform, respectively. The lifting lid assembly also has a first spring motor and a second spring motor, where the first spring motor is connected to the first platform by the first cable, and the second spring motor is connected to the second platform by the second cable. In another embodiment of the present invention, the first shaft and the second shaft are below the lifting lid, and the upper portion of each shaft is substantially flush with an upper edge portion of the lifting lid.

Lateral fryer lid lifting apparatus

A cooking system including a vessel having a first end, a second end, and a pair of opposing side walls and containing a cooking medium. A first heat exchanger tube has an outer wall and extends through the vessel from the first end to the second end. The first heat exchanger tube has a first inlet in the first end and a first outlet in the second end. The first heat exchanger tube also includes a combustion gas director tube, a first upper passage, and a first lower passage, wherein the director tube is joined to the first inlet and directs combustion gas into the upper passage and the upper passage is in communication with the lower passage. An upper transition baffle is placed in the first upper passage to smoothly direct combustion gases from the director tube into the first upper passage. Similarly, a communication passage is formed between the first upper passage and the first lower passage, and a lower transition baffle is placed in the communication passage to smoothly direct combustion gases from the first upper passage to the first lower passage. A burner introduces combustion gases into the upper passage through the first inlet, and air enter the upper passage through a gap between the burner and the first inlet to ensure the laminar flow of the combustion gases. A second heat exchanger tube is in contact with one of the opposing side walls outside of the vessel. The second heat exchanger includes a second upper passage and a second lower passage, such that the second lower passage is in communication with the second upper passage. A collection chamber receives the combustion gases from the first lower passage through the first outlet. The collection chamber includes a collection chamber divider which directs the combustion gases into the second lower passage through a second outlet. The combustion gases reenter the collection chamber from the second upper passage through a second inlet.
