Comestible compositions such as chewing gum containing freely dispersed L-aspartic acid sweetening agent derivative, moisture, and optionally, a manufacturing heat history of at least 115.degree. F., are rendered storage stable relative to the retention of recoverable levels of the L-aspartic acid derivative by adding freely dispersed hydrogenated starch hydrolysate thereto, thereby allowing for the effective use of relatively low levels of such L-aspartic acid derivative therein.

The sweetness of a chewing gum containing aspartame is stabilized by applying onto the chewing gum surface a suspension of aspartame in a liquid vehicle comprising ethyl alcohol and ethyl acetate.

An improved compressed soft chewable tablet is provided, which may contain an antacid or other active ingredient, has good flexibility, is breakage resistant and disintegrates immediately upon chewing. The tablet of the invention is formed of particles of antacid and/or other active ingredient which are isolated from other ingredients of the tablet, preferably by admixing particles of active ingredient with particles formed of edible fat or oil absorbed on a fat-absorbing material, such as microcrystalline cellulose and blending such particles with one or more tablet bonders; the tablet also includes additional amounts of tablet bonders, flavors and other conventional tabletting aids to help in making the tablet more palatable. Upon chewing, the tablet is quickly converted to a smooth creamy non-gritty palatable emulsion.

A system and method are provided for cooling gum base slabs used in the manufacture of chewing gum wherein hot liquid (190.degree.-280.degree. F) gum base is deposited in self-releasing polycarbonate trays, and cooled by chilled air forced in contact with the gum base and the plastic tray until the gum base slab is cooled sufficiently for depanning.

A sugarless chewing gum is provided wherein xylitol is employed as bulk filler and sweetener, and a hydrocolloid, such as xanthan gum or various alginates derived from giant kelp, is employed as a binder between the gum base and xylitol and as a humectant to facilitate retention of moisture in the gum.
