A method for producing a chewing gum, as well as the chewing gum so produced, incorporates a physiological cooling agent, such as acyclic carboxamide, or combinations of physiological cooling agents. In another embodiment a combination of physiological cooling agents is made in a modified release structure. The modified release/cooling agents combination is preferably obtained by physically modifying the properties of the combination of cooling agents by coating and drying. When incorporated into gum, these particles are adapted to enhance the shelf stability of the flavor and/or produce a modified release when the gum is chewed. In another embodiment, the physiological cooling agent is present with menthol and menthone.

A method for producing a chewing gum with a controlled release active agent, as well as the chewing gum so produced, is obtained by physically modifying the release properties of the active agent, such as a nutraceutical or nutritional supplement, by coating and drying. The active agent is coated by encapsulation, partially coated by agglomeration, entrapped by absorption, or treated by multiple steps of encapsulation, agglomeration, and absorption. The coated active agent is preferably then co-dried and particle sized to produce a release-modified active agent for use in chewing gum. The active agent may also be used in a coating on a chewing gum product, as part of a rolling compound applied to the chewing gum product, or as a part of the liquid in a liquid-center chewing gum product.

A dual composition hard coated chewing gum is provided, which exhibits improved long-term shelf stability under storage conditions involving constant exposure to the moisture contained in the atmosphere. The dual composition hard coated chewing gum is ideally suited for pellet chewing gum having pellet shapes which cannot easily be protected from atmospheric moisture by packaging. The dual composition hard coated chewing gum has a gum center which includes a gum base, a bulk portion, and one or more flavoring agents. The dual composition hard coated chewing gum also has an outer coating which includes layers which contain from about 50 to about 100% xylitol; and layers which contain from about 50 to about 100% of a non-xylitol polyol (preferably lactitol, maltitol or sorbitol, with lactitol and maltitol being particularly preferred). A method of preparing the dual composition hard coated chewing gum is also provided. The non-xylitol polyol is preferably applied first, and covered with a xylitol coating.

There is disclosed a synthetic non-chocolate flavored chewing gum base which is substantially free of natural gum products, as well as a method of making such a gum base. The gum base includes between about 10 and about 30 percent of a synthetic elastomer, between about 20 and about 70 percent of a synthetic resin, and between about 0.3 and about 2.4 percent cocoa powder. In accordance with the present invention, the cocoa powder has a fat content of less than about 1 percent.

Molten sorbitol is disclosed as a humectant for chewing gum. The chewing gum is prepared by providing a chewing gum base at a level of about 5% to about 80% of the chewing gum composition; providing a bulking agent at a level of about 5% to about 80% of the chewing gum composition; providing a flavoring agent at a level of about 0.1% to about 10% of the chewing gum composition; providing molten sorbitol at a level of about 0.25% to about 2.7% of the chewing gum composition; and mixing the gum base, bulking agent, flavoring agent and molten sorbitol into the chewing gum composition. Chewing gum made with about 0.25% to about 2.7% molten sorbitol is also disclosed.

Chewing gum compositions using unsaturated, purified monoglycerides to prolong the flavor release of the gum compositions are disclosed. In the preferred embodiments, gums contain from about 0.1% to 1.0% unsaturated, purified monoglycerides. Preferably the monoglycerides are purified to have greater than 90% monoglycerides. The present invention includes a method of enhancing the flavor of a mint flavored chewing gum by the addition of a minor amount of cocoa powder, as well as the chewing gum so produced. The amount of cocoa powder is selected so as to cause the flavor enhancement and so as to not impart a detectable chocolate flavor to the chewing gum. The level of cocoa powder added is between about 0.08 and 0.5 percent by weight of the chewing gum.

The present invention includes a method of enhancing the flavor of synthetic chewing gum base by the addition of a minor amount of cocoa powder to the base itself or to the chewing gum in which the base is used. Whether the cocoa powder is added to the gum base or to the chewing gum, the amount of cocoa powder should be between about 0.3 and 2.4 percent by weight of the gum base. The invention also includes the synthetic chewing gum base or a chewing gum with a synthetic gum base with cocoa powder added in a minor amount to enhance the flavor of the gum base.
