Provided is a food cooking surface for a cookware item or an electrical household cooking appliance, consisting of a deposit of nitride of metal elements on a substrate, the metal elements of the deposit comprising one or more X transition metal(s) and aluminium. The production of the deposit comprises a nitridation step in arder to obtain a coating of type (X,Al)N. According to the invention, the (X,Al)N-type coating is a coating of nitride(s) of the one or more X transition metal(s), enriched with aluminium, in which niobium and/or zirconium is/are make up the most part of the X transition metal(s), the atomic ratio of aluminium in the metal elements of the deposit being at least equal to 20%. Also provided are cookware items and electrical household appliances intended for the cooking of food, comprising the above-mentioned type of cooking surface.

The present invention relates to a cooking device including a metal holder supporting a ceramic cooking surface, the holder having a hardness no lower than 150 HV. The holder forms a substrate supporting a surface layer made of a transition metal boride or boronitride forming the cooking surface. The present invention further relates to a culinary article including a cooking device of the type above-mentioned, a household cooking appliance including a cooking device of the type above-mentioned, as well as a method for producing a cooking device of the type above-mentioned.

Provided is a food-cooking surface for a culinary article or domestic electrical cooking appliance, consisting in depositing Zr and/or Nb and/or Ti on a substrate, the production process including a step of carburizing and/or nitriding at least one of the aforementioned elements, characterized in that the cooking surface also includes depositing Si so as to produce (Zr/Nb/Ti)&#x2014;Si&#x2014;(N/C) coatings. Also provided is a culinary article or domestic electrical or gas cooking appliance comprising such a cooking surface.
