Multiple emulsions with an 'onion' topology are useful vehicles for drug delivery, biochemical assays, and templating materials. They can be assembled by ternary liquid phase separation using microfluidics, but the control over their design is limited because the mechanism of their creation is unknown. Here it is shown that phase separation occurs via self-similar cycles of mass transfer, spinodal decomposition or nucleation, and coalescence into multiple layers. Mapping out the phase diagram demonstrates a linear relation between concentric layer diameters, whose slope depends on the initial ternary composition and the molecular weight of the surfactant. These general rules quantitatively predict the number of droplet layers (multiplicity). Further, self-assembly routes for polymer capsules and liposomes are provided with techniques to assemble lipid-stabilized droplets with ordered internal structures.

Higher order multiple emulsions

A method of forming an end product by self-assembly of a first component having a patch of a linker component, such as DNA strands, cadherins, adhesive proteins and nanoparticle linkers. Such emulsions can be used to process personal care products, skin cremes, foods and animal feedstocks.

Specificity, flexibility and valence of DNA bonds for guided emulsion architecture

A biomimetic system is provided for use in modeling cell-cell adhesion mechanisms comprising functionalized emulsion droplets. Further, a cell culture medium and a drug delivery system using said biomimetic system are provided.

Biomimetic emulsions

A method and system for determining a packing property of a particulate composition. The method includes: obtaining size information relating to the particulate material; determining neighbor information from the size information; determining contact information from the size information; and determining a packing property from the neighbor information and the contact information, thereby enabling determination of the characteristic properties of the particulate composition. The method can be executed by use of a computer system to execute computer software instructions applied to data obtained on the particulate composition to determine a variety of properties of the particulate composition.
