The disclosed subject matter relates generally to a method for modifying oil, and specifically to a process for increasing the concentration of polyunsaturated fatty acid in an oil composition.

Enzymatic modification of oil

A method for producing diglycerides is provided. The method includes combining (i) an oil comprising at least one polyunsaturated fatty acid in the form of ethyl esters, free fatty acids, and/or combinations thereof, (ii) lipase, and (iii) glycerol in water to produce diglycerides with a high level of purity. Highly pure diglycerides obtained according to the method are also provided.

Chlorella fractionated extracts containing high molecular weight Chlorella polysaccharide and polysaccharide complexes show immune modulatory, specifically immune stimulatory activity. The fractionated extracts are obtained by size fractionation of an extract of Chlorella and selecting fractions containing high molecular weight polysaccharides and polysaccharide complexes of about 1&times;10 Da to about 1&times;10 Da. A fraction of about 4&times;10 Da to about 1&times;10 Da is preferably obtained by size fractionation.
