The present invention provides a method and nutritional composition for providing nutrition to pediatric patients. The methods of the present invention are especially directed to pediatric patients recovering from moderate trauma, burns or surgery. Pursuant to the present invention, the enteral composition includes a rapidly emptying, low gastric reflux protein source comprising approximately 10% to 14% of the total calories, a carbohydrate source and a lipid source comprising a mixture of medium and long chain triglycerides, wherein at least 20% of the lipid source are medium chain triglycerides.

Support of pediatric patients

A process is provided for the production of a vegetable-based sweetened condensed milk in which a vegetable protein in the form of an aqueous solution or suspension is subjected to partial enzymatic hydrolysis and a mixture containing approximately 4 to 9 parts by weight of fats, 8 to 18 parts by weight of the treated protein, 0 to 14 parts by weight of lactose, 40 to 55 parts by weight of sucrose and 25 to 32 parts by weight of water is prepared. Preferably the protein is subjected to an acetylation treatment before the mixture is prepared. The enzyme may be a microbial protease and the enzyme treatment is preferably carried out over a period of from about 1 to 24 hours at a temperature from about 25.degree. to 65.degree. C and at a pH of about 2 to 9. The protein is preferably a protein of Leguminosae, especially soya, or a yeast protein.

Process for the production of a vegetable-based sweetened condensed milk

A process for the preparation of a soluble fraction of soya proteins which comprises at least partially extracting the proteins present in soya in aqueous medium at a pH value below the isoelectric point of soya proteins to obtain an acid extract of soya proteins, and neutralizing the acid extract in a time of less than about 60 seconds by the addition of alkali in a concentration of higher than about 0.1 N.

Soluble soy protein

A process for the preparation of a soluble protein fraction which comprises extracting a protein-containing vegetable material with an aqueous medium at a pH value below 4, treating the resulting aqueous extract by gel filtration at a pH value below 4 and recovering a soluble protein fraction by elution.
