A biosynthetic method for producing glucosamine and N-acetylglucosamine is disclosed. Such a method includes the fermentation of a genetically modified microorganism to produce glucosamine and/or N-acetylglucosamine. Also disclosed are genetically modified microorganisms that are useful for producing glucosamine and N-acetylglucosamine. In addition, methods of recovering N-acetylglucosamine that has been produced by a fermentation process, including methods that result in N-acetylglucosamine of high purity, are described. Also disclosed is a method to produce glucosamine from N-acetylglucosamine.

Process and materials for production of glucosamine and N-acetylglucosamine

The invention is an acid-chitosan complex which is made up of chitosan, a sufficient amount of one or more acids, and an effective amount of water. This acid-chitosan is water-soluble in a dry form. A further aspect of this invention is various methods for producing such a water-soluble acid-chitosan complex and methods for using this acid-chitosan complex, particularly for reducing fat absorption in an animal.

Hydroxyethylcellulose (HEC), hydrophobically modified hydroxyethylcellulose (HMHEC), hydroxypropylcellulose (HPC), methylhydroxypropylcellulose (MHPC), carboxymethylhydroxyethylcellulose (CMHEC), guar, starch, xanthan, hydroxypropylguar (HP Guar) or carboxymethylhydroxypropylguar (CMHP Guar) are stepwise or continuously reacted with hydrogen peroxide to produce aqueous compositions with a solids content greater than 5% by weight at a viscosity at 25.degree. C. below 9500 mPa.s. It is preferred to use 30-50% hydrogen peroxide to depolymerize the polysaccharide.
