The present invention is directed to improving productivity of an enzymatic method for producing esterified, transesterified or interesterified fats or oils. Specifically, a method that can greatly improve the productivity of enzymatic esterification, transesterification or interesterification by purifying the substrate oil to extend the useful life of the enzyme is disclosed.

Method for producing fats or oils

Oil of improved quality is produced by treating the oil with an active substance capable of reducing the anisidine value of the oil. Food products comprising the oil of improved quality are also disclosed.

Processes of improving the quality of oil and products produced therefrom

Methods of producing light-color, color stable plant oils are presented. Cationic ion exchange resins have been found to be effective in removing color bodies from plant oils to produce a light-color, color stable plant oil. The methods may be applied to plant oils, including corn oil. Color stable corn oils having a light color are also presented.

Light-color plant oils and related methods

This invention relates to a method of hydrolyzing glycerol fatty acid ester-containing composition, such as a fat and/or an oil, to produce fatty acids having a low proportion of trans-isomer fatty acids. Specifically, the present invention relates to a process for the hydrolyzing the glycerol fatty acid ester-containing compositions under conditions resulting in a low proportion of trans-isomer fatty acids.

Method for the production of fatty acids having a low trans-fatty acid content

A process of producing a light-colored, high-monoester mixture from a polyol and an oil is provided wherein the process eliminates the use of organic solvents, multiple water washings and/or molecular distillation. The reactants, a polyol and an oil, described herein, condense in the presence of a catalyst, described herein, at a temperature range from about 180&deg; C. to about 280&deg; C. under an inert atmosphere or the vapor pressure of the polyol with a pressure of about 0 to about 500 psig to yield a monoester mixture possessing a desirable monoester composition and color. The present process yields a final product similar to that of processes which require the use of solvents, multiple water washings and/or molecular distillation.
